Apple Cinnamon Blondies

Report
Apple Cinnamon Blondies blend moist, brown sugar-sweetened batter with tender diced apples and warm cinnamon spice, creating soft blondies topped with a spiced icing drizzle. The melted butter base enriches the dense bars, making them suitable for those craving a treat with a doughy texture enhanced by fruity bits and sweet icing.

Description

The recipe combines melted butter and light brown sugar, mixed with vanilla and egg, to form the base for blondies. Dry ingredients including all-purpose flour, cinnamon, and baking powder are folded into the mixture along with finely diced apples that provide bursts of moisture and texture throughout. Baking in an 8x8 inch pan gives a dense yet tender bar with a soft crumb.

The final touch is a thin icing made by mixing powdered sugar, milk, and cinnamon, which is drizzled over the cooled blondies to add a sweet, lightly spiced glaze enhancing both appearance and flavor. The combination of cinnamon from the batter and icing harmonizes with the fresh apple pieces to provide a comforting fall-inspired taste.

These blondies can be enjoyed as a snack or dessert and keep well when refrigerated. Storing in the fridge brings out a doughy texture that some find preferable, and they stay good for up to five days when kept airtight. This dessert fits nicely into casual meals or packed lunches where a satisfying sweet treat is desired.

When preparing, cooling completely before icing is essential to keep the drizzle intact. Adjust the thickness of the icing with milk or powdered sugar to achieve the desired pouring consistency.

Ingredients

Servings

Blondies

  • ½ cup butter melted
  • 1 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 ¼ cup all-purpose flour
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • 1 apple finely diced, large

Icing

  • ¼ cup powdered sugar
  • 1 tbsp milk
  • pinch cinnamon

Instructions

  1. Preheat oven to 350°F
  2. Dice the apple and line the 8x8 pan with parchment paper.
  3. In a microwave safe mixing bowl, melt the butter in 30 second intervals, until fully melted.
  4. Allow it to cool slightly, then whisk in the brown sugar ensuring there is no ‘standing’ butter on top of the sugar layer.
  5. Whisk in the vanilla extract and egg.
  6. Add in the dry ingredients: all purpose flour, cinnamon, salt, and baking soda. Fold together until the batter forms.
  7. Fold in almost all of the diced apples, saving a few for the top. Place into the greased lined pan. You’ll need to use a rubber spatula to evenly spread the blondies into the pan.
  8. Make the icing: Whisk together powdered sugar, milk & cinnamon together. If needed, add more milk or powdered sugar to reach desired consistency! You want it thin enough to drizzle, but thick enough to harden.
  9. Allow the blondies to cool and then drizzle with icing. Slice and enjoy!

Notes

  • Store blondies in an airtight container in the refrigerator to preserve their doughy texture for up to five days.
  • Chilling the blondies enhances their texture and flavor when served.
