Apple Cinnamon Bread

Apple Cinnamon Bread blends diced Granny Smith apples with warm spices like cinnamon, allspice, and nutmeg in a moist batter made with Greek yogurt, applesauce, and a mix of whole wheat and all-purpose flour. It is baked in a loaf pan and topped with a pecan crumble made from flour, brown sugar, cinnamon, and cold butter for contrasting texture and flavor.

Description

The Apple Cinnamon Bread recipe starts by combining diced Granny Smith apples with brown sugar and a warm spice mix of cinnamon, allspice, and nutmeg. The batter is prepared with white whole wheat flour and all-purpose flour, along with Greek yogurt and unsweetened applesauce for moisture and tenderness. Eggs and melted butter bind the ingredients while vanilla extract adds aroma.

The loaf is finished with a pecan crumble topping made by working cold butter into flour, brown sugar, cinnamon, and chopped pecans, adding a crunchy contrast to the soft bread. Baking occurs in a buttered and floured loaf pan at 350°F until done.

This bread makes a flavorful breakfast or snack, pairing well with butter or cream cheese. Its balance of spices, apples, and creamy texture from yogurt brings a comforting homemade baked good. The crumble topping enhances each slice with a nutty crunch.

To store, keep cooled bread airtight on the counter up to three days or in the fridge for a week. It can be frozen tightly wrapped for up to four months and thawed before serving to preserve freshness and texture.

Ingredients

Servings

For the bread:

  • 1 apple peeled, cored and chopped into small pieces, Granny Smith
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups white whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup  Greek yogurt
  • 1/2 cup applesauce unsweetened
  • 2 egg
  • 2 teaspoons vanilla extract
  • 5 tablespoons butter melted, unsalted

For the crumble topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/3 cup pecans chopped
  • 3 tablespoons butter cold unsalted

Instructions

  1. Preheat oven to 350 degrees F. Butter and flour the bottom and sides of a 9 x 5 inch loaf pan; set aside.
  2. In a small bowl, combine chopped apples, brown sugar, cinnamon, allspice and nutmeg; set aside.
  3. In a medium bowl, whisk together flours, baking powder, baking soda and salt; set aside.
  4. In a large bowl, stir together yogurt and applesauce until combined. Add eggs, one at a time, mixing until combined. Add vanilla and butter and stir until incorporated.
  5. Gradually add the dry ingredients to the wet ingredients until barely combined. The batter will be thick but be careful not to over-mix.
  6. Using a rubber spatula, gently fold the apples into the batter. Transfer batter to prepared loaf pan.
  7. To prepare the crumble topping, combine the flour, sugar, cinnamon and pecans together in a small bowl. Use your fingertips to work the cold butter into the flour mixture. Sprinkle the crumble topping over the batter in the pan and gently press down with your hands.
  8. Bake for 40 to 50 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown. (You can cover the bread with foil during the last ten minutes of baking time to prevent over-browning.) Cool in pan for 10 minutes then transfer to a wire rack to cool completely. Enjoy!

Notes

  • Store cooled apple bread in an airtight container on the counter for up to 3 days or refrigerate for up to 1 week.
  • For freezing, fully cool the bread, then wrap tightly with plastic wrap and foil before placing in an airtight container or freezer bag.
  • Frozen bread keeps fresh up to 4 months and should be thawed at room temperature before serving.
