Apple Cinnamon Coffee Cake

Apple Cinnamon Coffee Cake features a moist, thick batter blended with cinnamon and yogurt, folded with finely chopped apple for added texture and flavor. Thinly sliced apples arranged atop the batter are crowned with a crumbly cinnamon-spiced topping that crisps during baking, adding a sweet crunch. This combination results in a tender cake with layers of apple flavor and a variety of textures, ideal for breakfast or teatime.

Description

The Apple Cinnamon Coffee Cake is a layered dessert with a cinnamon-spiced crumb topping and an apple-infused cake base. The cake batter incorporates yogurt, brown sugar, oil, and maple syrup, creating moisture and subtle sweetness. Cinnamon is present both in the batter and topping, reinforcing the warm-spiced apple flavor. Finely chopped apple is folded into the batter to distribute flavor throughout, while thinly sliced lemon-dressed apple slices are laid on top for visual appeal and additional fruit texture after baking.

The crumb topping combines brown and granulated sugars with cinnamon and butter, adding sweetness and a crunchy texture that contrasts the tender cake. Baking at 350°F produces a golden crust and soft crumb. This cake works well for breakfast, brunch, or as a comforting dessert.

Care is needed not to overmix the batter to maintain a tender crumb. The cake is baked in an 8-inch square pan, making eight to nine servings depending on slice size.

Ingredients

Servings

For the crumb topping:

  • 1/3 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 4 tablespoons butter (melted)
  • 2/3 cup all-purpose flour

For the cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2/3 cup yogurt (any plain or vanilla flavored yogurt or Greek yogurt; can substitute buttermilk or sour cream)
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup pure maple syrup
  • 2 apple peeled and cored, medium
  • 2 teaspoons lemon juice

Instructions

  1. Preheat the oven to 350°F/175°C. Grease and flour an 8-inch/20cm square cake pan.
  2. Make the crumb topping. In a medium bowl, toss together the sugars, cinnamon, and salt. Stir in the melted butter with a fork. Add the flour and stir together until just moist (don’t overmix). Set aside.
  3. To make the cake, whisk together the dry ingredients in a large bowl (flour, baking soda, baking powder, salt, and cinnamon). In another medium bowl, whisk together the yogurt, brown sugar, oil, and maple syrup
  4. Take 1 apple and finely chop it (or grate it using the largest holes on your box grater). Fold it into the wet ingredients. Take the other apple, and cut it into thin slices. Toss in lemon juice and set aside.
  5. Fold the dry ingredients into the wet ingredients until just combined––do not overmix. The batter will be thick. Pour batter into the prepared pan and smooth it out.
  6. Line the surface of the cake with the apple slices. Spread the crumb topping on top of the apples.
  7. Bake for 50 minutes, or until a toothpick comes out clean. Cool for at least 10 minutes before cutting and serving (serve warm or at room temperature).
