Moist and flavorful apple cinnamon muffins that are great for breakfast, dessert or a snack!

Ingredients
- 1 ½ cups peeled and diced apples about 5oz cut into ¼” cubes
- 2 tsp ground cinnamon
- 2 tsp lemon juice
- 2 eggs
- ¼ cup milk
- ½ cup PLAIN yogurt
- 1 cup granulated sugar
- ¼ cup brown sugar - packed
- ¼ cup vegetable oil
- 2 tsp vanilla extract
- 1 ¾ cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp kosher salt

Instructions
- Preheat oven to 350F. In a small bowl mix the diced apples, cinnamon and lemon juice and set aside
- Whisk eggs, milk, yogurt, sugar, brown sugar, oil, and vanilla together in a large mixing bowl.
- In a separate bowl combine the flour, baking powder, baking soda and salt.
- Fold dry ingredients into wet with a flat spatula and then mix the cinnamon apples into the mixture.
- Line 12 muffin cups with liners and scoop about ⅓ cup of batter into each of the cups.
- Place in the oven and bake at 350F for 30 minutes. Cool completely and enjoy!
Notes
- To make these muffins gluten free use a 1:1 ratio gluten free flour blend
- To make them dairy free use a vegan yogurt
