Apple cinnamon rolls

These apple cinnamon rolls combine a soft, slightly sweet dough with a buttery filling of cinnamon-spiced brown sugar and chopped Granny Smith apples. The rolls rise twice for a tender texture before baking, resulting in a warm, fragrant treat. The balance of tart apples and cinnamon adds a fresh twist to traditional cinnamon rolls. They can be baked in one large pan or several smaller ones, suited for sharing or enjoying over several days. Careful dough handling and avoiding apple juice on the dough help maintain a non-soggy, well-risen final roll.

Description

Apple cinnamon rolls are made from a yeast dough enriched with butter, milk, and egg, producing a soft and pliable base. After the first rise, the dough is rolled out and spread with butter, then layered with a mixture of brown sugar, cinnamon, and chopped Granny Smith apples. Rolling the dough tightly and slicing into 16 pieces creates individual rolls that rise again before baking. This double rising ensures a tender crumb and slightly airy texture.

The filling melds sweet brown sugar with tartness from the apples and a warm cinnamon spice. Baking melts the butter and caramelizes the sugar, enhancing the flavor while the apple pieces provide moisture and bite without sogginess if excess juice is avoided. The rolls develop a golden crust outside and soft inside.

This recipe benefits from room temperature ingredients and gentle kneading to develop gluten without toughening. The rising phases can be done in a warm place like an unheated oven to encourage yeast activity. Serving the rolls warm or slightly cooled highlights their freshness, making them suitable for breakfast or dessert.

The notes suggest not using released apple juice on the dough to keep it from becoming soggy and recommend using melted butter if preferred for spreading. Storing these rolls loosely covered keeps them soft for a day or two.

Ingredients

Servings

Dough:

  • 3-3 1/2 cup all-purpose flour
  • 1/4 cup white sugar
  • 1 active dry yeast instant, packet
  • 1/2 cup milk
  • 1/2 cup water
  • 4 tbsp. butter unsalted
  • 1 egg lightly beaten

Filling:

  • 5 tbsp. butter unsalted
  • 1 cup brown sugar
  • 3 apple peeled and chopped into small chunks, Granny Smith variety
  • 2 tbsp. cinnamon

Instructions

  1. Mix 2 cups of flour, sugar, yeast and in a big mixing bowl.
  2. Microwave milk, water and butter (4 tbsp.) until it’s almost melted. About 1:30 minutes)
  3. Mix the egg into the milk mixture.
  4. Add the wet ingredients into dry ingredients and mix until incorporated.
  5. Add one more cup of flour and a bit more so the dough forms into a ball.
  6. Knead for 7 minutes.
  7. Cover the bowl with plastic wrap and a towel. Let the dough rise for 25 minutes.
  8. Coat one big baking pan or 2-3 smaller ones with non-stick spray.
  9. After 25 minutes, roll out the dough into a big rectangle, not so thick and not so thin.
  10. Spread the butter all over the dough up to the edges.
  11. Mix apples with cinnamon.
  12. Spread brown sugar, apples and more cinnamon if desired.
  13. Roll the dough and cut it in half, and each half into half and again into half. You will have 16 pieces.
  14. Place the rolls in the pan/pans.
  15. Cover loosely with a towel and let the rolls rise for 45 minutes.
  16. After 30 minutes preheat the oven to 180C or 350F.
  17. Bake the rolls for 25-30 minutes.
  18. Serve warm.

Notes

  • Use room temperature milk, butter, and egg to help mix the dough evenly.
  • Knead the dough for about 7 minutes to develop a good texture before the first rise.
  • Avoid spreading any liquid released by the apples on the dough to prevent sogginess.
  • Butter for the filling can be melted for easier spreading if desired.
  • Let the dough rise in a warm, draft-free spot such as inside an unheated oven.
