Apple Cinnamon Yogurt Parfait with Granola

Ingredients

Servings
  • 3 cup Greek yogurt Dannon Light and Fit vanilla flavor
  • 1 apple 200 grams, large, peeled and chopped
  • 1 1/2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • arrowroot flour to thicken the sauce, optional, 1/8 tsp

Granola

  • 3/4 cup rolled oats
  • 1 1/2 tbsp coconut flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Pre-heat oven to 250 degrees. Line a baking sheet with SILPAT.
  2. Mix all granola ingredients together until clumpy.  Spread evenly on baking sheet, being careful not to break apart the clumps too much.  Bake for 40 minutes, flipping with a spatula halfway through.
  3. Add apples, maple syrup, and cinnamon to a small pan.  Bring to a boil over medium heat, then cover and lower heat to a simmer for 10-15 minutes or until apples are tender.
  4. If using arrowroot, whisk with 1 tbsp water until dissolved, then stir into apple mixture.  Bring mixture up to a boil again, stirring frequently.  Remove from heat and allow to cool.
  5. Layer yogurt, apples, and granola as desired for serving.
