Apple Cobbler
Description
Apple Cobbler combines peeled and chopped apples with sugar, flour, cinnamon, lemon juice, and water to create a juicy, sweet filling. This mixture is spread evenly in a greased 9x13 inch pan. The topping is a biscuit-like batter made from all-purpose flour, baking powder, sugar, cold butter cut into small pieces, buttermilk, and vanilla extract. It is spooned over the apple filling in dollops and sprinkled with coarse sugar for texture and sparkle.
During baking, the topping forms golden-brown biscuits while the apples soften into a thick, spiced filling. The dish is baked until the topping is cooked through and the apples are tender, about 45-50 minutes. Serving warm with vanilla ice cream and caramel sauce is optional and adds richness.
This cobbler captures warm cinnamon notes balanced by the tartness of lemon juice on the apples. The biscuits provide a soft yet slightly crisp contrast to the softness of the cooked fruit.
Ensuring apples are cut into uniform pieces helps them cook evenly. Using coarse sparkling sugar atop the biscuits preserves a crystalline texture that doesn’t melt in the oven, adding visual and textural interest to the topping.
Ingredients
For the apple filling
- 10 cups apple peeled, cored and cut into 3/4 inch pieces
- 1 cup granulated sugar
- 1 tablespoon flour
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 3 tablespoons water
For the cobbler topping
- 1 2/3 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup butter cold, cut into small pieces
- 1 cup buttermilk
- 3/4 teaspoon vanilla extract
- 2 tablespoons sugar coarse
- cooking spray
- vanilla ice cream optional, for serving
- caramel sauce optional, for serving
Instructions
- Preheat the oven to 375 degrees F. Coat a 9' x 13' pan with cooking spray.
- For the filling: Place the apples, sugar, flour, cinnamon, lemon juice and water in a large bowl. Toss to coat.
- Pour the apple mixture into the prepared pan in an even layer.
- For the topping: Place the flour, baking powder, salt and sugar in a bowl. Stir to combine. Add the butter to the bowl and use a pastry blender or two forks to cut the butter into the flour mixture until the batter looks like small coarse pebbles.
- Pour the buttermilk and vanilla extract into the flour mixture. Stir to make a batter.
- Place spoonfuls of the batter mixture over the apples. Top with the coarse sugar.
- Bake for 45-50 minutes or until biscuits are golden brown and apples are tender. If the biscuits look like they're browning too quickly, you can cover the dish with a piece of foil.
- Let cool for at least 20 minutes, then serve, with ice cream and caramel sauce if desired.
Notes
- Cut the apples into evenly sized pieces to ensure even cooking and consistent texture in the filling.
- Top the cobbler with coarse sparkling sugar rather than regular granulated sugar for a decorative, crunchy finish that holds its shape while baking.
