Apple Cranberry Baked Oatmeal

This baked oatmeal blends unsweetened applesauce, eggs, and rolled oats with fresh or frozen cranberries for a hearty, fruit-forward breakfast. Spices and baking powder add warmth and lift, while the baking process creates a golden, moist texture that holds together when baked in a casserole dish.

Description

Apple Cranberry Baked Oatmeal combines creamy unsweetened applesauce with eggs and brown sugar to create a smooth wet base. Vanilla extract, cinnamon, salt, and baking powder add flavor complexity and leavening. Milk adds moisture, allowing the rolled oats and halved cranberries to hydrate and combine evenly. The cranberries give tart bursts against the subtly sweet apple and cinnamon flavors.

After mixing, the oatmeal is poured into a casserole and baked at 375ºF until set and golden brown around the edges, with a soft but cooked interior. The baking process creates a warm, filling dish with a lightly firm surface and tender inside, making it easy to slice and serve. It's suitable for cold or warm eating.

This oatmeal works well for breakfast or brunch and can be refrigerated to reheat later. Using frozen cranberries without thawing simplifies preparation and retains their firmness. It offers a tasty way to incorporate fruit and whole grains in a comforting form.
