Apple Crisp

This apple crisp recipe combines tart Granny Smith apples sliced and coated with cinnamon, vanilla, and sugar, baked under a crisp topping made from flour, oats, brown and granulated sugar, cinnamon, salt, and cold butter. The result is a warm, tender fruit base with a crumbly, golden topping, ideal for a comforting dessert served warm, optionally alongside vanilla ice cream.

Description

Apple Crisp features a filling of peeled and sliced Granny Smith apples tossed with fresh lemon juice, sugar, cinnamon, vanilla extract, and cornstarch to create a thickened, flavorful fruit base. The topping blends all-purpose flour, old fashioned oats, brown and granulated sugars, cinnamon, salt, and chilled unsalted butter worked into coarse clumps. The assembled dish is baked at 350 degrees F until the topping is golden and apples are soft and bubbling.

The texture contrasts the tender, subtly tart apples with a crunchy, sweet cinnamon-oat topping. It can be served warm to maximize the softness of the fruit and the crisp nature of the topping, with vanilla ice cream as a popular accompaniment to balance warm and cold sensations.

Using Granny Smith apples ensures the filling holds its shape and adds tartness, but a mix with other varieties like Honeycrisp or Fuji can provide more depth of flavor. The lemon juice helps prevent browning of the apples before baking.

Ingredients

Servings

For the topping:

  • 1 cup all-purpose flour
  • 1 cup old fashioned oats
  • 3/4 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon kosher salt
  • 12 tablespoons butter cut into tablespoon pieces, cold unsalted

For the apple filling:

  • 10 cups apple about 8 medium apples, sliced and peeled, Granny Smith variety
  • 1 tablespoon lemon juice fresh
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract pure
  • 1 teaspoon corn starch

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9x13- inch baking pan with nonstick cooking spray. Set aside.
  2. First, make the apple crisp topping. In a medium bowl, combine flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Mix in the cold butter pieces with your fingers or a pastry cutter until it comes together and large clumps form. Set the topping aside. If it is warm in your house, you can put the topping in the refrigerator while you prepare the filling.
  3. In a large bowl, combine the apple slices, lemon juice, sugar, cinnamon, vanilla extract, and corn starch. Stir until the apples are well coated.
  4. Pour the apple mixture evenly into the prepared pan. Sprinkle the topping evenly over the apples. Bake for 45 minutes or until the topping is golden brown and the apples are soft and bubbling around the edges.
  5. Let the crisp cool for 10 minutes. Serve warm with vanilla ice cream, if desired.

Notes

  • Granny Smith apples provide a crisp apple flavor and hold texture well, but mixing with Honeycrisp or Fuji apples adds complexity.
  • Lemon juice prevents the apples from browning while preparing the filling.
