Apple Crisp

Apple Crisp features sliced tart baking apples covered with a crumbly topping of flour, sugars, pecans, oats, and cold butter, baked until the apples are tender and the topping turns golden brown. The texture contrasts between soft baked apples and toasted oat-pecan crumbs with a sweet, buttery flavor. It is often served warm alongside whipped cream or vanilla ice cream, making it a classic dessert for cooler seasons.

Description

This Apple Crisp starts by mixing a crumb topping made from flour, brown and granulated sugars, salt, and diced cold butter pulsed until coarse crumbs form. Pecans and rolled oats are stirred in to add texture and nutty flavor. The apples are peeled, cored, and sliced into quarter-inch-thick pieces and tossed with sugar to sweeten before spreading them in a buttered baking dish. The oat topping is spread evenly over the apples, and the whole dish is baked until the apples soften and the topping turns a toasty golden color.

The crisp’s flavors highlight the tartness of the baking apples balanced by the buttery, sweet, nutty topping. The baking process melds the textures, leaving tender apple slices beneath a crunchy, toasted crust.

Serving the apple crisp warm enhances its comforting appeal, especially when paired with cold vanilla ice cream or whipped cream to add creamy richness and temperature contrast.

The dessert can be frozen after baking for up to three months and reheated uncovered in a moderate oven to restore crispness before serving again.

Ingredients

Servings
  • ¼ cup all-purpose flour plus 2 tablespoons
  • ¼ cup light brown sugar packed, 2 tablespoons
  • ½ cup granulated sugar divided, plus 2 tablespoons
  • Pinch salt
  • 6 tablespoons unsalted butter cut into ½-inch dice, very cold
  • 1 cup pecans chopped
  • ½ cup rolled oats old-fashioned
  • pounds baking apples peeled, cored and sliced ¼-inch (6-mm) thick, tart, about 5 large
  • Whipped Cream for serving (optional, or vanilla ice cream

Instructions

  1. Preheat the oven to 350°F (175°C) and set an oven rack in the middle position.
  2. In a food processor, pulse the flour with the brown sugar, ¼ cup (50 g) of the granulated sugar, and salt until combined. Add the butter and pulse until the mixture resembles coarse meal. Transfer the crumbs to a bowl and stir in the pecans and oats. Set aside.
  3. Generously butter a shallow 2-quart baking dish. In a medium bowl, toss the apples with the remaining 6 tablespoons granulated sugar. Transfer the apple mixture to the prepared baking dish and cover with the oat topping. Bake in the middle of the oven for 40 to 50 minutes, or until the apples are tender when pierced and the topping is toasted. Serve warm with vanilla ice cream if desired.
  4. Freezer-Friendly Instructions: The baked crisp can be frozen, tightly covered, for up to 3 months. Before serving, thaw overnight in the refrigerator and reheat it, uncovered, in a 300°F (150°C) oven until heated through and crisp on top.
