Apple Crisp

This apple crisp combines firm Granny Smith and sweeter Fuji apples sliced and baked under a crumbly topping made of oats, flour, brown sugar, and cold butter. The dessert yields tender fruit with a golden, crisp topping, great served warm with vanilla ice cream.

Description

Apple Crisp uses a blend of tart Granny Smith and sweet Fuji apples peeled and sliced evenly, layered in a baking dish, then sprinkled with ground cinnamon. The topping combines cold unsalted butter cut into a mixture of brown sugar, old-fashioned oats, and all-purpose flour until crumbly. The topping is spread evenly over the apples and baked at 350°F until golden and bubbling.

During baking, the apples soften but retain some body, while the topping crisps to a buttery, slightly chewy texture enhanced by the oats and cinnamon. Serving with vanilla ice cream adds cool creaminess to the warm dessert.

This classic apple crisp suits making ahead by assembling and keeping refrigerated until ready to bake. Combining apple varieties helps balance flavors and textures. Using cold butter for the topping ensures a crumbly consistency rather than a doughy one.

Ingredients

Servings
  • 5-6 apple Granny Smith variety, peeled and thinly sliced
  • 2-3 apple Fuji variety, peeled and thinly sliced
  • 1 tablespoon ground cinnamon
  • 1 ¼ cups butter unsalted
  • 1 cup dark brown sugar
  • ¾ cup old fashioned oats
  • 1 cup all-purpose flour
  • vanilla ice cream to serve

Instructions

  1. Preheat oven to 350 degrees F.
  2. Peel, core, quarter and slice the apples into ⅓ inch pieces. Pile the apple slices into decorative baking dish (about 10 inches in diameter) and sprinkle with the cinnamon, making sure to evenly layer the top of the apples.
  3. In a medium bowl, add the flour, oats, brown sugar, and diced butter.
  4. Use a pastry cutter or fork to combine the butter, brown sugar, oats and flour until it's crumbly. Evenly pile the topping over the apples.
  5. Bake for 55-60 minutes until the top is golden brown and the apples are soft.
  6. Remove from the oven and let sit for 10 minutes. Serve with ice cream

Notes

  • Prepare the apple crisp up to the point of adding the topping and refrigerate covered if making ahead; add the topping and bake when ready.
  • A mix of firm apples, such as tart Granny Smith and sweeter Fuji, provides balanced flavor and texture.
  • Keep butter cold when preparing the streusel topping to maintain a crumbly texture after baking.
