Apple Crisp Muffins
Description
These Apple Crisp Muffins integrate diced apples into a spiced, brown sugar-sweetened batter made with flour, baking soda, cinnamon, nutmeg, egg, buttermilk, and melted butter. Optional additions include raisins or chopped pecans for added texture. A streusel topping composed of brown sugar, chopped pecans, flour, cinnamon, and butter is spread generously over each muffin, creating a crisp, flavorful crust after baking.
The combination of warm spices and apple provides a familiar profile reminiscent of apple crisp desserts but in convenient individual portions. The muffins bake at 375°F until set and golden, developing a domed top typical of bakery-style muffins. Serving these muffins warm enhances the flavor and texture, and they pair well with butter or preserves.
The notes recommend peeling apples for texture preference but note it as optional, suggest using liners or greasing pan to ease removal, and advise gentle mixing to maintain muffin lightness. They also mention checking doneness with a toothpick and filling the pan to the top edge to achieve a full muffin dome.
Ingredients
Muffins
- 2 ¼ cups flour
- 1 ½ cups brown sugar packed
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 egg
- 1 cup buttermilk
- ½ cup butter melted
- 1 teaspoon vanilla extract
- 2 cup apple peeling is recommended but optional, diced
Optional Mix-Ins
- ½ cup raisins if desired
- ½ cup pecans chopped, or walnuts
Topping
- ½ cup brown sugar packed
- ½ cup pecans or walnuts, chopped
- ⅓ cup flour
- 1 teaspoon cinnamon
- 3 tablespoons butter melted
Instructions
- Preheat oven to 375 degrees.
- Combine dry ingredients (flour, brown sugar, baking soda, salt, cinnamon and nutmeg) into a large bowl.
- Add wet ingredients (egg, buttermilk, melted butter and vanilla extract) and stir until blended. Do not overmix. If adding raisins or chopped nuts add them now.
- Add apples and gently stir until coated.
- Add to muffin pan, ideally with cups or liners or coated with cooking spray or melted butter. Fill to top edge of muffin pan.
- In a small bowl combine topping ingredients. Use fingers or another kitchen tool to coat everything in butter. Totally cover muffins with ALL of the topping.
- Bake for 25 minutes. Allow to cool in pan. Serve and enjoy!
Notes
- Distribute diced apple pieces evenly by folding gently into the batter.
- Use muffin liners or thoroughly grease pans to prevent sticking and ease cleanup.
- Combine dry ingredients first before adding wet to avoid overmixing and dense muffins.
- Fill muffin cups to the brim to form bakery-style domed tops.
- Check doneness by inserting a toothpick; it should come out clean or with moist crumbs.
- Peeling apples is recommended for smoother texture but not required.
- Serve warm with butter or your choice of jam for enhanced flavor.
