  • 1 ½ cups brown sugar packed
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 egg
  • 1 cup buttermilk
  • ½ cup butter melted
  • 1 teaspoon vanilla extract
  • 2 cup apple peeling is recommended but optional, diced

Optional Mix-Ins

  • ½ cup raisins if desired
  • ½ cup pecans chopped, or walnuts

Topping

  • ½ cup brown sugar packed
  • ½ cup pecans or walnuts, chopped
  • cup flour
  • 1 teaspoon cinnamon
  • 3 tablespoons butter melted

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine dry ingredients (flour, brown sugar, baking soda, salt, cinnamon and nutmeg) into a large bowl.
  3. Add wet ingredients (egg, buttermilk, melted butter and vanilla extract) and stir until blended. Do not overmix. If adding raisins or chopped nuts add them now.
  4. Add apples and gently stir until coated.
  5. Add to muffin pan, ideally with cups or liners or coated with cooking spray or melted butter. Fill to top edge of muffin pan.
  6. In a small bowl combine topping ingredients. Use fingers or another kitchen tool to coat everything in butter. Totally cover muffins with ALL of the topping.
  7. Bake for 25 minutes. Allow to cool in pan. Serve and enjoy!
