Description

This pie begins by cooking sliced Golden Delicious apples with lemon juice, cinnamon, nutmeg, and butter until softened and juicy. The cooking liquid is reduced to a syrup before mixing with sugars, vanilla, additional spices, flour, oats, and an egg to form the filling, which is then placed in the pie crust.

The topping is a crumble made by mixing flour, sugars, salt, rolled oats, and diced butter by hand into small clusters. This crumble is spread over the apple filling and baked at 375°F for about 50 minutes until the topping is golden and crisp.

The result is a warm dessert combining tender, sweet-spiced apples with a crunchy, buttery oat topping. This pie offers a textural contrast and comforting autumnal flavors suitable for serving with cream or ice cream.

  • 1 pie crust
  • 3 pounds apple sliced, Golden Delicious variety
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground cinnamon
  • generous pinch of ground nutmeg
  • 1/4 cup butter unsalted
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar , loosely measured
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cloves ground
  • 3/4 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1 egg large
  • 1 1/2 cups flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar , packed
  • 1/2 teaspoon kosher salt
  • 1 cup rolled oats
  • 4 ticks butter diced, unsalted

Instructions

  1. Preheat oven to 375 degrees.

To Make the Filling:

  1. Add the apples, lemon juice, 1/4 teaspoon cinnamon, nutmeg and 2 sticks of butter in a large skillet, I used my trusty cast iron skillet.
  2. Cook on medium for 5-7 minutes or until the apples are just wilted and have released their juices.
  3. Drain the apple in a colander back into the skillet.
  4. Put the apples into a bowl.
  5. Cook the remaining juices down into a syrup the consistency of honey.
  6. Add the reduced syrup, 3/4 cup sugar, 1/4 cup brown sugar, 2 teaspoons vanilla, 1 teaspoon cinnamon, 1/4 teaspoon allspice, 1/4 teaspoon cloves, 3/4 cup flour, 3/4 cup rolled oats and egg. Mix well and add to pie crust.

To Make the Crumble:

  1. Combine 1 1/2 cups flour, 3/4 cup sugar, 3/4 cups brown sugar, 1/2 teaspoon kosher salt, 1 cup rolled outs and 2 sticks butter and mash together with your hands into small clusters.
  2. Add crumble to the top of the filling.
  3. Bake for 50 minutes.
