Apple Crisp Recipe

Apple Crisp features peeled, cored, thinly sliced apples mixed with sugar, cinnamon, lemon juice, and flour, topped with a butter and oat crumble. Baking produces a warm dessert with tender, slightly tart fruit beneath a crisp, golden topping spiced with cinnamon and vanilla.

Description

This Apple Crisp Recipe uses about two pounds of peeled, cored, and thinly sliced apples seasoned with light brown sugar, lemon juice, cinnamon, and a touch of salt. The lemon juice helps prevent discoloration and adds brightness. The topping contains melted unsalted butter, vanilla extract, oats, flour, brown sugar, baking soda, salt, and cinnamon, creating a crumbly, flavorful crust when baked.

The assembled dish is baked at 375°F until golden brown and bubbly, combining the tender cooked apple filling with a crisp and slightly crunchy topping. Choosing tart apples like Granny Smith provides balance to the sweetness and helps the slices maintain structure during baking.

Apple Crisp works well as a comforting dessert served warm, possibly with ice cream or whipped cream. The recipe is straightforward, suitable for using fresh apples and usual pantry staples. Instructions caution about pan types and note adjustments in baking time depending on cookware.

Make ahead tips include peeling and slicing apples and preparing the topping separately. Storing and freezing instructions are detailed in the recipe FAQ. The recipe references the importance of measuring oats correctly for the topping to achieve the desired texture.

Ingredients

Servings
  • 2 lbs apple cored, peeled and sliced no thicker than ¼"¹
  • ¼ cup light brown sugar
  • 1 Tablespoon lemon juice
  • 1 Tablespoon all-purpose flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt

Crisp

  • 9 Tablespoons butter melted, unsalted
  • ¾ teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • 1 cup old fashioned oats
  • ½ cup light brown sugar tightly packed
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375F (190C) and lightly grease a 9x9 or 11x7 glass baking dish² with butter. Set a side.
  2. Combine sliced apples, brown sugar, lemon juice, flour, cinnamon, and salt in a large bowl. Give everything a good stir until all ingredients are combined and set aside while you prepare your crisp topping.

Crisp

  1. Prepare your topping by whisking together butter and vanilla extract. Set aside (you don't want the butter to be too hot when you add your sugar, so let it cool while you prepare your dry ingredients)
  2. In a separate bowl, stir together flour, oats, sugar, baking soda, salt, and cinnamon.
  3. Pour butter into flour mixture and use a fork to stir until mixture is combined and clumpy (don't over-stir, you want it to be crumbly, not paste-like). Set aside.

Assembly

  1. Give your apple mixture another good stir and pour evenly into your prepared pan.
  2. Use your hands to drop your crumble mixture evenly overtop your apple filling.
  3. Transfer to 375F (190C) oven and bake for 50 minutes or until topping is lightly golden brown and apples are tender when pierced with a fork. If topping is starting to become too dark and apples are still crisp, cover apple crisp with foil while continuing to bake.
  4. Serve warm (preferably topped with ice cream!)

Notes

  • Use about seven small Granny Smith apples for tartness and firmness.
  • A metal pan may require a shorter baking time; watch for doneness accordingly.
  • Measure oats carefully; 1 cup is correct despite some contrary video instructions.
  • Full storage, freezing, and reheating guidelines are available in the recipe’s FAQ section.
  • Sweeter apple varieties will yield a sweeter, faster-cooking crisp.
