Apple Crostata

The Apple Crostata is a rustic tart featuring thinly sliced Granny Smith apples tossed with sugar, cinnamon, vanilla, and flour, arranged on a rolled-out pie crust with a folded border. It bakes to a golden, crisp crust with tender, flavorful apple filling. The lightly sweetened and spiced apples complement the flaky pastry, producing a homey dessert that highlights tart apple balanced with warm cinnamon and vanilla notes.

Description

This crostata begins with a 9-inch pie crust rolled to 12 inches to provide enough border for folding. Thinly sliced Granny Smith apples are combined with sugar, cinnamon, flour, and vanilla in a bowl, evenly coating the slices and adding sweetness and spice. The apple mixture is piled gently in the center of the crust, leaving room for the edges to be folded inward in 2-inch wide sections, creating a rustic frame.

The crust edges are brushed with a mixture of egg white and water, then sprinkled with sanding sugar to create a subtle crunch and shimmer when baked. The crostata is baked at 400 degrees until the crust turns golden and the apples are tender, capturing a balance of crisp pastry and juicy, spiced fruit.

This preparation lends itself well to casual serving with or without cream or ice cream. The crostata’s open format showcases the apples and makes for a relatively straightforward fruit tart that does not require a pie plate.
