Apple Crumb Bars

These Apple Crumb Bars combine a tender, spiced base with thinly sliced Honeycrisp apples and a crisp walnut oat crumble on top. The bars balance soft, moist cake texture beneath with a crunchy, buttery topping that provides contrasts in both texture and flavor. Aromatic spices like cardamom and cinnamon add warmth, complementing the fruit and nuts. They are well-suited to bake in a 9x9 pan for easy slicing and make a satisfying dessert or snack. A light dusting of confectioners' sugar adds subtle sweetness and visual appeal.

Description

Apple Crumb Bars bring together a spiced flour and butter batter as the base, enriched by eggs and milk or cream for moisture. Thinly sliced peeled Honeycrisp apples are layered evenly atop this batter, ensuring each bite has tender fruit. The topping combines flour, rolled oats, cold butter, sugar, and ground walnuts blended by hand into a streusel that crisps up as it bakes. Baking at 350°F for around 50 minutes yields a golden, lightly browned crust with a tender cake base and a crunchy, nutty topping.

The inclusion of warming spices like cardamom and cinnamon enhances the natural sweetness of the apples and gives subtle complexity. Serving these bars fresh or slightly cooled reveals textured layers — soft, dense base, tender fruit slices, and crumbly topping.

Dusting with confectioners' sugar brightens the presentation. Thanks to the sturdy pan-sized shape, these bars are easy to slice and serve for casual occasions or snacks, and they store well if kept in an airtight container.

Ingredients

Servings

crumble

  • 3/4 cup all-purpose flour 96 grams
  • 1/4 cup rolled oats old fashioned, 25 grams
  • 6 Tbsp butter unsalted, cold, cut in small pieces, 85 grams
  • 1/2 cup granulated sugar 100 grams
  • 1/2 cup walnuts ground (pulse in a food processor

base

  • 3 apple Honeycrisp, peeled and thinly sliced
  • lemon juice
  • 1/2 cup butter unsalted, at room temperature, 113 grams
  • 1/2 cup sugar 50 grams
  • 2 egg large
  • 3 Tbsp milk or cream
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • confectioners' sugar for dusting the finished bars

Instructions

  1. Preheat oven to 350F and lightly spray a 9x9 baking pan. Line the pan with parchment paper, if you like.
  2. Put the streusel ingredients in a small bowl and blend everything together with your fingertips until there is no more raw flour.
  3. Make sure to break down any large clumps of butter so there is a somewhat uniform crumbly texture. Set aside in the refrigerator.
  4. Toss the apple slices with a little lemon juice to prevent browning.
  5. Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
  6. Whisk together the flour, baking powder, spices, and salt.
  7. Fold the dry ingredients into the butter/sugar mixture, along with the milk or cream.
  8. Spoon the batter in to the pan, and smooth out evenly.
  9. Top with the sliced apples. There's no need to arrange them precisely, but try to get them in an even layer.
  10. Sprinkle the crumble topping evenly over the apples.
  11. Bake for about 50 minutes, until the top is lightly browned and a toothpick comes out without wet batter clinging to it. Lay a loose layer of foil over the top if the crumble is browning too quickly.
  12. Let cool a bit in the pan before removing the sides. Dust with confectioner's sugar before serving.
