Apple Crumb Cake

Apple Crumb Cake combines diced peeled apples into a moist batter flavored with cinnamon and vanilla, baked under a crumbly streusel topping of cinnamon and brown sugar. A vanilla glaze can be drizzled atop the cooled cake for added sweetness. This cake balances tender fruit pieces and a soft crumb with a crunchy sweet topping, ideal for a breakfast treat or dessert.

Description

Apple Crumb Cake features a batter mixing melted butter, sugars, eggs, vanilla, and sour cream combined with flour, cinnamon, baking powder, baking soda, and salt, folded with peeled diced apples. The mix yields a moist cake with tender fruit pieces throughout.

On top, a cinnamon-spiced streusel made from flour, sugars, cinnamon, salt, and melted butter is sprinkled over the batter before baking, providing a crisp, sweet contrast once baked at 350°F (175°C) for about 45-50 minutes. After cooling, an optional vanilla glaze made with powdered sugar, milk, and vanilla extract adds a delicate sweetness and shine.

This cake serves well for breakfast, brunch, or as a dessert, with its balance of soft cake crumb and sweet crunchy topping. The warm cinnamon and apple flavor combination adds seasonal appeal.

The cake can be kept covered at room temperature for up to three days or tightly wrapped and frozen for one to two months. Cooling completely before glazing ensures the glaze sets properly without melting.

Ingredients

Servings
  • ¾ cup butter melted and cooled until no longer warm to the touch, unsalted
  • ½ cup granulated sugar
  • ¼ cup light brown sugar firmly packed
  • 2 large egg lightly beaten
  • 1 ½ teaspoon vanilla extract
  • ½ cup sour cream
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ cups apple this was about 1 ½ apples for me, diced, peeled

Streusel Topping

  • 1 cup all-purpose flour
  • ¾ cup light brown sugar firmly packed
  • 2 Tablespoons granulated sugar
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 Tablespoons butter melted and cooled until no longer warm to the touch, unsalted

Vanilla Glaze

  • ½ cup powdered sugar
  • 2-3 teaspoons milk (any kind)
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F (175C) and lightly grease and flour a 9" (23cm) springform pan.
  2. Combine melted butter and sugars in a large bowl and stir until well-combined
  3. Add eggs and vanilla extract, stir well
  4. Stir in sour cream.
  5. In a separate, medium-sized bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
  6. Using a spatula, gradually add dry ingredients and wet and stir until just combined-- do not over-mix!
  7. Fold in apple pieces and pour batter evenly into prepared pan.  Set aside and prepare your streusel.

Streusel

  1. Prepare the crumble topping by whisking together flour, sugars, cinnamon and salt.
  2. Pour the melted butter into the mixture and, using a fork, stir until crumbles form.  Evenly sprinkle streusel over batter.
  3. Transfer pan to oven and bake on 350F (175C) for 45-50 minutes, or until a toothpick inserted in the center comes out clean.  Allow to cool before adding vanilla glaze.

Vanilla Glaze

  1. If desired, make glaze by whisking together powdered sugar, milk, and vanilla. Start with 2 teaspoons of milk and add a third if it isn't thin enough to drizzle.
  2. Drizzle over cooled cake. Allow glaze to harden, slice, and enjoy!
