Ingredients
Muffins
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup whole milk
- ¼ cup vegetable oil
- 1 large egg
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ cups Granny Smith apples peeled and diced (about 2 apples)
Crumb Topping
- ⅓ cup brown sugar
- 1 teaspoon ground cinnamon
- ⅔ cup all-purpose flour
- 1 Dash salt
- ¼ cup unsalted butter melted
Instructions
Muffins
- Preheat the oven to 400 degrees Fahrenheit. Spray a muffin pan with non-stick cooking spray, or line it with muffin liners and set aside.
- In a small bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt.
- In a large bowl, combine 1 cup whole milk, ¼ cup vegetable oil, 1 large egg, ½ cup granulated sugar, and 1 teaspoon vanilla extract.
- Add the flour mixture to the milk mixture and mix until combined.
- Stir in the 1 ½ cups Granny Smith apples peeled and diced.
- Scoop the batter into the prepared muffin pan until each well is about ⅔ full. Set aside.
Crumb Topping
- Prepare the crumb topping by mixing ⅓ cup brown sugar, 1 teaspoon ground cinnamon, ⅔ cup all-purpose flour, and 1 dash salt in a small bowl.
- Add ¼ cup unsalted butter and mix until everything is evenly moistened and you have pieces about the size of small peas.
- Sprinkle the crumb topping evenly over the muffin batter in the muffin pan.
- Bake for 20-22 minutes, until a toothpick comes out clean from the center of the muffins. Let them cool for at least 15 minutes before serving.
