Description
Apple Crumble Bars start with a base made from melted butter, flour, sugar, baking powder, and an egg, pressed into a baking pan and partially baked to set. While it cooks, an apple filling is prepared with diced Granny Smith apples mixed with flour, sugar, cinnamon, and nutmeg for balanced sweetness and spice.
The topping incorporates rolled oats into the reserved crumble mixture, creating a coarse, crumbly texture that crisps during baking. After layering the apple filling on the cooled base, the oat streusel is scattered on top and the bars are baked again until the topping is deep golden.
The finished bars combine a firm but tender crust, juicy tart apples, and a crisp, buttery topping. They can be enjoyed by hand or plated with caramel sauce and ice cream for added richness. These bars hold well for several days in an airtight container, and the topping can be re-crisped under a broiler if it softens.
Ingredients
Base & crumble topping:
- 125g / 1 stick butter melted, unsalted
- 2 cups (300g) flour , plain/all purpose
- 1/2 cup (100g) white sugar
- 1/2 tsp baking powder
- Pinch salt
- 1 egg
For crumble topping:
- 1/3 cup (30g) rolled oats note 1
Apple Filling:
- 3 - 4 apple cut into 0.7cm / 1/3" dice(~4 cups, Granny Smith, large
- 1/4 cup (35g) plain flour (all purpose flour)
- 1/4 cup (50g) white sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Serving
- caramel sauce salted
- Ice cream
Instructions
- Preheat oven to 180C/350.
- Grease a 20cm/8" square pan and line with baking/parchment paper with overhang (so it can be lifted out once cooked).
- Mix together butter, flour, sugar, baking powder and salt until you can no longer see white bits of flour.
- Add egg and mix.
- Lightly press 2/3 of the mixture into the bottom of the pan.
- Bake for 15 minutes until slightly golden, then remove and cool for 5 minutes.
- Apple Filling: While the base is cooking, mix together Apple Filling ingredients in a bowl.
Crumble Topping:
- Add oats into reserved crumble mixture. Mix with wooden spoon / fingers until oats are mostly incorporated into the dough.
Assemble:
- Spread Apple Filling on base, then use hands to crumble topping all over.
- Bake for 30 - 35 minutes or until the top is deep golden.
- Remove and allow to cool in the tin before lifting out of the tin using the baking paper.
- Cut and serve! Eat with hands, or serve on plates. Take it over the top with ice cream and salted caramel sauce!
Notes
- Use traditional rolled oats for the crumble topping, not quick, instant, or steel-cut oats.
- Granny Smith apples provide a tart contrast, but any apple type can be substituted; reduce sugar if apples are very sweet.
- Store bars in an airtight container for up to 4-5 days; topping softens over time but can be re-crisped under a grill or broiler.
- Serving with salted caramel sauce and ice cream enhances the dessert with creamy and sweet notes.
