Apple Dapple Cake

Apple Dapple Cake is a moist, spiced cake combining a thick batter of flour, cinnamon, nutmeg, and sugars with chunks of peeled apples folded in. It bakes until golden and a toothpick comes out clean, then is topped while warm with a rich glaze of butter, brown and granulated sugar, heavy cream, and vanilla. The result is a tender, flavorful dessert featuring soft apple pieces and a creamy sweet topping.

Description

The Apple Dapple Cake uses a combination of aromatic spices—cinnamon, nutmeg, and salt—in the dry ingredients mixed with flour and baking soda. The wet ingredients include vegetable oil, granulated sugar, brown sugar, vanilla, and eggs, beaten together before gradually adding dry ingredients. Folding in peeled, chopped apples adds moisture and texture to the dense batter.

Baked in a 9x13-inch pan at 325F for about an hour, the cake becomes tender with a thick, cake-like crumb and soft fruit throughout. While baking, a glaze made from butter, brown and granulated sugars, heavy cream, and vanilla is simmered and poured over the warm cake, adding a creamy, sweet finish that soaks into the surface.

This cake works well for dessert or an afternoon snack. Using tart baking apples like Granny Smith provides a balanced flavor. Chopped nuts can be added for extra texture.

The cake keeps for several days refrigerated or at room temperature and freezes well for up to three months, making it suitable for make-ahead occasions.

Ingredients

Servings
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 ½ cups vegetable oil
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar packed
  • 2 teaspoons vanilla extract
  • 3 large egg
  • 4 cups apple peeled and chopped into ½-inch chunks

Glaze:

  • 1/3 cup butter
  • 1/3 cup brown sugar packed
  • 1/3 cup granulated sugar
  • 1/3 cup heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 325F. Grease a 9x13-inch baking pan with non-stick cooking spray; set aside.
  2. In a medium mixing bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt; set aside.
  3. In a large mixing bowl, beat together the vegetable oil, granulated sugar, and brown sugar with an electric mixer on medium speed. Beat in the vanilla and the eggs one at a time.
  4. Add the dry mixture a little at a time, mixing well between each addition. Note: the batter will be very thick.
  5. Using a sturdy wooden spoon, fold the apples into the batter.
  6. Spread into the prepared 9x13-inch pan and bake at 325F for 50-60 minutes until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, make the glaze. Add all the ingredients to a medium saucepan. Heat over medium heat, stirring often, until the mixture begins to simmer. Remove from the and cool for 5 minutes.
  8. Pour the glaze over the cake while it’s still warm.
  9. Slice the cake and serve.

Notes

  • Use firm, tart apples like Granny Smith or a mix of baking apples for the best flavor and texture.
  • Add 1 cup chopped pecans or walnuts to the batter for added crunch if desired.
  • The cake can be stored covered at room temperature or refrigerated for up to five days, or frozen up to three months.
