Apple Oatmeal Cookies
Description
This recipe features old-fashioned oats combined with whole wheat flour or all-purpose flour, baking powder, cinnamon, nutmeg, and a touch of salt. The wet ingredients incorporate melted coconut oil, egg, vanilla extract, and agave syrup, forming a sticky batter once mixed with dry ingredients. Finely diced apple pieces coated with lemon juice and zest add moisture and fresh tartness to the cookie dough. The brief refrigeration helps the batter firm up for easier handling.
Baked at a moderate temperature for 12 to 15 minutes, these cookies develop a lightly browned edge with a soft interior bolstered by the oats and apples. The combination of cinnamon and nutmeg gives a warming aroma and flavor that complements the apple's natural sweetness.
This recipe is flexible with sweetener choice and works well for breakfast-style cookies or a wholesome snack option.
Ingredients
- 1 cup old-fashioned oats
- 1 cup whole wheat flour or all purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- kosher salt pinch, fine
- 2 tbsp coconut oil melted
- 1 large egg at room temperature
- 2 tsp vanilla extract
- 2/3 cup agave syrup or maple syrup
- 1 large apple finely diced, of choice
- 1-2 tbsp lemon juice fresh
- 2 tsp lemon zest
Instructions
- In a bowl, combine the dry ingredients: oats, flour, baking powder, cinnamon, nutmeg, and salt.
- In a second bowl, whisk all the wet ingredients: coconut oil, egg, vanilla and agave syrup. Add the dry over the wet and stir until combined.
- Finely chop the apple, add the zest, and squeeze over the lemon juice, tossing to coat mostly all the pieces. Add the chopped apple to the bowl with the batter and stir to incorporate. Refrigerate for 15 minutes.
- Meanwhile, preheat the oven to 325ºF and line a large sheet pan with parchment paper. Scoop the cold batter onto the prepared sheet pan; you should have around 8 scoops. They'll slightly flatten as you finish scooping the last one. Bake for 12-15 minutes, then cool in the pan.
Notes
- Use rolled oats for the best texture.
- Dice apples finely to distribute moisture evenly throughout the cookie.
- Any preferred sweetener can substitute agave syrup as desired.
