Apple Oatmeal Crumb Bars

Ingredients

  • 1.25 cup all-purpose flour or gluten free flour, cup
  • 1 cup rolled oats not quick oats, old-fashioned
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup butter cooled to room temperature, melted
  • ¾ cup coconut sugar packed, or brown sugar
  • 1 teaspoon vanilla
  • 1 egg large, yolk
  • 1 tablespoon flour
  • 1 tablespoon coconut sugar or brown sugar
  • 2 apple cored, pealed and sliced about ¼ inch thick, large
  • 1 teaspoon cinnamon
  • 1 tablespoon coconut sugar or brown sugar
  • 2 teaspoons cornstarch
  • ¼ teaspoon ground nutmeg

Instructions

  1. DIRECTIONS
  2. Preheat the oven to 350F degrees.
  3. Line an 8x8 or 9x9 inch square baking pan with parchment paper.
  4. In a large bowl whisk together the first 4 ingredients from the flour to salt
  5. In a separate medium sized bowl whisk together the melted butter, ¾ cup coconut (brown) sugar, vanilla and egg yolk.
  6. Add the butter mixture into the flour mixture and mix everything together completely.
  7. Set aside 1 heaping cup of the mixture.
  8. Press the remaining oatmeal mixture into the bottom of the prepared pan.
  9. For the apple mixture, mix together the sliced apples with the cinnamon, sugar and cornstarch until the apples are evenly coated.
  10. Arrange the apples into an even layer over top of the bottom oatmeal layer.
  11. In a small bowl mix the reserved 1 cup of oatmeal mixture with the extra 1 tablespoon of flour and brown sugar.
  12. Crumble the oatmeal mixture over top of the apple layer.
  13. Bake for about 30 minutes or until it begins to brown on the top.
  14. Cool completely before cutting.
  15. ENJOY!!
