Apple Pancakes with Caramel Syrup
Description
These Apple Pancakes start by grating peeled and cored apples to yield about two cups, then mixing them with milk, eggs, and vanilla extract. Dry ingredients including flour, sugar, salt, baking powder, and cinnamon are gently folded in to form the batter. The pancakes are cooked in butter on a skillet, browning the edges before flipping. The use of grated apples adds moisture and subtle fruit sweetness throughout the pancake.
The accompanying Caramel Syrup is made by melting butter and brown sugar over medium heat until foamy and bubbling, then adding cream, salt, and vanilla after simmering. The resulting warm syrupis rich and flavorful, perfect for pouring over the pancakes or using as a dip.
This recipe suits a leisurely morning meal where a rich, sweet breakfast is welcome. The pancakes deliver a tender texture framed with buttery, cinnamon notes, while the caramel syrup introduces a creamy, indulgent contrast. This combination works well for cooler days or special brunch occasions.
Ingredients
for the apple pancakes-
- 2 large apple any variety
- 2 egg
- 1/2 cup milk whole
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 3-4 tablespoons butter for frying
for the warm caramel sauce-
- 1/2 cup butter
- 1 cup brown sugar packed
- 1/4 cup cream or whole milk
- dash salt
- 1/2 teaspoon vanilla extract
Instructions
Apple Pancakes
- Begin by peeling, coring and grating apples into a large bowl. You should yield approximately 2 cups. Into the apples, stir in milk, eggs, and vanilla. Slowly stir in all dry ingredients until combined.
- Heat a large skillet over medium to medium-high heat. Grease liberally with butter. Drop batter by 1/4 cup onto the hot surface. Once edges have browned, flip to cook the other side (just like making pancakes). Remove pancakes to a plate and cover with foil. Re-grease the pan with more butter and repeat until all the batter is cooked.
Caramel Syrup
- To make the warm caramel sauce, melt butter and sugar together over medium heat while stirring occasionally. Let the mixture simmer lightly until it starts to bubble and look foamy. Cook like this for 3-5 minutes.
- Stir in milk, salt, and vanilla. Turn burner off, but leave caramel sauce on the hot stove until ready to serve. Pour into a serving dish and serve with the apple pancakes.
