Apple Pear Galette Puff Pastry

The easiest galette you could make, with a puff pastry dough and a delicious spiced fruit filling.

Ingredients

  • 2 pear peeled, thinly sliced
  • 2 apple You could also use all apples(3) or all pears (4, peeled, thinly sliced
  • squeeze lemon juice
  • 1/3 cup brown sugar 70 g, light or dark, light used
  • 1 tablespoon all-purpose flour 9 g
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoon ground ginger
  • 1 puff pastry sheet 400 g or 14 oz, see notes on thawing, thawed
  • 2 tablespoon butter 28 g, cold, sliced into thin pats
  • 1 egg beaten for egg wash

Instructions

  1. Preheat oven to 390 F (200C).
  2. In a large bowl, toss sliced apples and pears with lemon juice, brown sugar, flour, cinnamon, and ginger powder.
  3. Roll out puff pastry dough into a 1/4 inch thick, 12 inch circle. Transfer to a parchment paper lined baking sheet, and arrange the fruit slices in the center, leaving a dough border free. You can see more in the video attached under the nutritional information!
  4. Fold the dough over the fruit filling, place butter pats evenly on fruit.
  5. Brush the edges of the dough with egg wash, and bake for 25-30 min until golden brown. Enjoy warm, preferably served with vanilla ice cream and caramel sauce!

Notes

  • The puff pastry sheet should thaw quickly, 30 minutes or so at room temperature. You can also stick the frozen puff pastry overnight in the fridge to thaw.
  • You can use any type of apples you like, green or red. You can also only apples or only pears.
  • Leftovers can be stored for 2-3 days in the fridge, and reheated in the microwave or the oven. They'll actually still taste great!
  • Unbaked and baked whole galettes can also be frozen up to 3 months in the fridge, and thawed overnight in the fridge before baking/heating.
