Description

This Apple Pecan Pie recipe uses two refrigerated deep-dish pie crusts combined to form a sturdy base with a thick edge. The crust is lightly baked filled with whole pecan halves for a crunchy foundation. The filling consists of peeled, diced apples folded into a mixture of light corn syrup, sugar, eggs, melted butter, and vanilla, providing sweetness and richness.

After assembly, the crust edge is brushed with an egg wash and sprinkled with coarse sugar to produce a slight caramelized crunch when baked. The pie is baked at 350 degrees Fahrenheit for 60 to 70 minutes until the center sets and reaches approximately 200 degrees, verified by a slight spring back when tapped.   • 2 pie crust I buy these in a two-pack, 9-inch refrigerated, unbaked, deep-dish
  • 1 cup light corn syrup Karo® brand
  • 3 egg divided
  • 1 cup sugar
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla
  • 1 ½ cups pecan halves (6 ounces)
  • 2 apple peeled and chopped into ½ inch pieces, gala, fuji, or any favorite red
  • 1 tablespoon milk
  • 1 tablespoon sugar or granulated sugar, coarse

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine the dough from both pie crusts and roll out to make one, thicker crust. Gently press into a deep-dish pie pan and fold excess dough back toward the center of the dish to create a nice, thick edge. 
  3. Fill pie crust with pecans.
  4. In a large bowl stir together corn syrup, eggs, sugar, butter, and vanilla.
  5. Stir in apples.
  6. Pour filling into unbaked pie crust (over the pecans).
  7. Whisk together remaining 1 egg and 1 tablespoon milk. Brush the egg wash over the edge of the pie crust, then sprinkle with coarse sugar. 
  8. Bake on center rack of preheated oven for 60-70 minutes until pie is set. (Center of pie should reach 200 degrees, or check doneness for tapping the center of the pie lightly - it should spring back!)
  9. Cool completely (about 2 hours) on a cooling rack before slicing and serving.
  10. Reheat individual slices in the microwave if desired and top with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy!

  • Check doneness by ensuring the pie center reaches 200 degrees Fahrenheit or it springs back when lightly tapped.
