Apple Pie Cheesecake Bars
Description
This recipe starts with a crust made from melted butter, graham cracker crumbs, sugar, and cinnamon pressed into a pan and baked briefly. Apples are peeled, cored, sliced, and tossed with sugar and cinnamon to bring out their sweetness and spice.
The cheesecake filling mixes cream cheese, eggs, sugar, and a pinch of salt until smooth, then folded with the prepared apples before pouring over the crust. The bars bake uncovered at 350°F until the filling is set but still creamy.
The finished bars combine the tangy cream cheese and sweet, spiced apples on a firm cinnamon crust. They can be served as a dessert snack and topped optionally with caramel sauce and sea salt for contrast.
The bars keep refrigerated up to five days in an airtight container and freeze well if wrapped tightly after freezing solid. This makes them suitable for make-ahead serving and longer storage.
Ingredients
For Crust
- 6 tablespoons butter melted
- 2 cups graham cracker crumbs
- 3 tablespoons sugar
- ½ teaspoon cinnamon ground
For Cheesecake Filling
- 16 ounces cream cheese at room temperature
- 3 large egg
- ¼ cup sugar
- ¼ teaspoon salt
For Apples
- 2 large apple peeled, cored and sliced in small pieces
- ½ teaspoon cinnamon
- 3 tablespoons sugar
Optional Toppings
- caramel sauce I used store bought
- salt sea salt
Instructions
- Heat oven to 350°F. Line a 9x9 baking pan with parchment paper, spray it with cooking spray first so that the parchment paper sticks to the pan. Set aside.
- In a medium bowl mix together the melted butter, 1/2 tsp cinnamon, sugar and the graham cracker crumbs. Pour the mixture into the prepared baking pan and press evenly. It might be easier to use the bottom of a glass to press the crumbs down to make a thin layer. Bake for 10 minutes.
- In a medium bowl mix together the apples with the sugar and cinnamon.
- To the bowl of your mixer add the cream cheese, sugar, eggs and pinch of salt. Beat on medium high for at least 5 minutes or until the mixture is smooth. Gently fold in the prepared apples into the cheesecake mixture.
- Pour the cream cheese filling over the crust in the baking pan. Level the top off with a spatula.
- Transfer the baking pan to the oven and bake uncovered for about an hour or until the filling is set. Let the cheesecake cool completely before slicing into it.
- Once the cake is cooled slice it into squares. Drizzle with caramel sauce and sprinkle with sea salt.
Notes
- Store cooled bars in an airtight container in the refrigerator for up to 5 days.
- Freeze bars by first freezing uncovered until solid, then wrapping tightly with plastic wrap and foil; frozen bars keep for up to 3 months.
- Use parchment paper sprayed with cooking spray to line the pan for easy removal.
