Apple Pie Filling

Apple Pie Filling mixes peeled, thinly sliced apples with a spiced, thickened syrup of sugars, cinnamon, nutmeg, cornstarch, and lemon juice. Simmering softens the apples while the sauce thickens, creating a smooth, flavorful filling ideal for pies or desserts. The butter adds a glossy richness to finish.

Description

This Apple Pie Filling recipe starts by coating peeled, thinly sliced apples with lemon juice to prevent discoloration and add brightness. A mixture of brown and granulated sugars, cinnamon, nutmeg, and cornstarch is cooked with water until it thickens into a syrup. The apples are then added to the syrup and simmered gently until just softened but still holding shape.

The combination of warm spices and sweet syrup balances the tartness of the apples, while the cornstarch provides a smooth, thick consistency ideal for filling pies. Adding butter at the end enriches the sauce and gives it a glossy finish. Cooling the filling before storage preserves its texture.

This filling can be stored refrigerated for up to five days or frozen for up to two months. Apples can be cut to any uniform size or shape depending on preference, ensuring even cooking.

  • 2 teaspoons lemon juice
  • 3 cups water
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg freshly ground if possible
  • 1 tablespoon butter

Instructions

  1. Drizzle the lemon juice over the apple slices.
  2. Place the water, brown sugar, granulated sugar, cornstarch, cinnamon and nutmeg in a large pan.
  3. Bring to a simmer, stirring occasionally.
  4. Bring the mixture to a boil and cook for 1 minute or until just thickened.
  5. Add the apples to the pan and stir to coat with the sauce. Lower the heat to medium and cook until the apples have softened, about 10 minutes.
  6. Add the butter to the pan and stir until it has melted.
  7. Cool the apple filling for 10 minutes, then transfer it to containers and refrigerate or freeze until you're ready to use it.

Notes

  • Cut apples uniformly to ensure even cooking.
  • The filling keeps in the refrigerator for up to 5 days or can be frozen for up to 2 months.
  • Use this filling in pies or other recipes like Dutch apple pie for best results.
