Apple Pie Oatmeal Bars

Apple Pie Oatmeal Bars combine a spiced apple pie filling with a crumbly oat-based crust and topping. The filling is cooked until softened and thickened, then layered between a buttery oat crust and a crumb topping, creating bars that balance tender, juicy apples with a slightly crisp, oat-studded texture. This bar recipe works well for snack time or dessert when you want the flavors of apple pie in a convenient handheld form.

Description

Apple Pie Oatmeal Bars consist of a fruit filling made by cooking chopped apples with butter, brown sugar, flour, cinnamon, water, and salt until tender and thickened. This filling is sandwiched between two layers of an oat and flour mixture combined with brown sugar, baking powder, salt, and butter, pressed into a baking dish. Baking creates a warm, tender apple center with a light, crumbly, and slightly chewy outer layer thanks to the oats. The top layer browns lightly and adds textural contrast.

The flavor here highlights cinnamon-spiced apple with rich butter and brown sugar notes in the oatmeal crust. The texture contrasts the soft filling and the sturdy yet tender crumb layers, making these bars convenient to eat by hand without needing utensils.

Serve these bars as a wholesome snack or a casual dessert, great alongside coffee or tea. They store well and can be cut into portions to share or pack for on-the-go.

  1. Preheat the oven to 350 degrees F. Grease a 9-inch x 13-inch baking dish with non-stick cooking spray.
  2. Whisk together the flour, oats, brown sugar, baking powder, and salt in a large mixing bowl.
  3. Using a fork or pastry cutter, add in the butter and work until well combined. The mixture should have a crumbly texture and sticks together when pinched between your finger tips.
  4. Press half of the oat mixture into an even layer in the bottom of the prepared baking dish.
  5. Spread the apple pie mixture over the oat mixture and spread evenly in the pan.
  6. Sprinkle the remaining oat mixture evenly on top of the apples.
  7. Place into the oven and bake for 30 to 40 minutes until golden brown.
  8. Remove the baking dihs from the oven and allow to cool completely on a wire rack in the pan. (If you can wait that long.) Then cut into 12 squares and serve. Store any leftovers in an air-tight container.
