Apple Pie Oatmeal Cookies

These Apple Pie Oatmeal Cookies combine rolled oats, almond flour, and warm spices with fresh apple pieces and chopped nuts to create a cookie with a tender but hearty texture. The addition of cinnamon and coconut sugar provides a mildly sweet, fall-inspired flavor reminiscent of apple pie. A light maple icing drizzle adds a subtle sweetness and finishing touch. These cookies hold their shape well through baking and offer a soft, chewy bite with bits of apple and walnut adding bursts of texture.

Description

Apple Pie Oatmeal Cookies use a blend of rolled oats and almond flour along with coconut sugar and cinnamon to mirror the familiar flavors of apple pie in cookie form. The dough incorporates applesauce and fresh apple pieces for moisture and texture. After mixing, the dough is shaped into balls and gently pressed before baking to maintain shape, yielding cookies that are golden brown with a soft chew and slightly crisp edges. Once cooled, a simple maple icing is drizzled over the top to add a sweet glaze.

The combination of apples, nuts, and warm spices creates a comforting treat that complements the oatmeal’s chewiness and almond flour's subtle nuttiness. These cookies suit afternoon snacks or dessert and store well once cooled.

Careful chopping of apples into small pieces is advised to prevent the cookies from falling apart. Substitutions like using sweetened applesauce or alternative sugars are possible, though the original ratios maintain balance and texture.

  • 1 large egg room temperature
  • ½ cup applesauce room temperature, unsweetened
  • 1 ½ teaspoon vanilla extract
  • 3 tablespoon coconut oil melted
  • ½ cup coconut sugar 70g
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 cups rolled oats old fashion, 200g, gluten-free or regular
  • 1 cup almond flour 112g, super-fine, spooned and leveled
  • ½ teaspoon baking soda
  • cup apple skinless (¼ inch pieces or smaller, red, diced
  • cup walnuts roughly chopped, or pecans

Maple Icing:

  • ½ cup powdered sugar
  • 1 tablespoon pure maple syrup

Instructions

  1. Preheat oven to 350F and line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk the egg.
  3. Add in unsweetened applesauce, vanilla extract, melted coconut oil, coconut sugar, cinnamon, and salt. Mix with a spatula until fully combined.
  4. Add in rolled oats, almond flour, and baking soda. Gently mix with a spatula until fully combined.
  5. Add in apple pieces and chopped nut of choice.
  6. Using your hands or a cookie dough scooper, form 18 – 20 balls (about 2 Tablespoons each) and evenly space them across the two lined baking sheets. Gently press down to form a cookie shape (these cookies will not spread a lot).
  7. Bake for 13 – 15 minutes, until golden brown. Remove from the oven and let them cool on the sheets for 5 - 10 minutes before transferring to a wire rack.
  8. Meanwhile, prepare icing in a small bowl. Once cookies are cooled, use a fork to drizzle icing across cookies.
  9. Enjoy!

Notes

  • Use small apple cubes to maintain cookie integrity and prevent crumbling.
  • Unsweetened applesauce can be replaced with sweetened if preferred.
  • Melted coconut oil may be substituted with melted butter or vegan butter.
  • Light brown sugar can replace coconut sugar on a one-to-one basis.
