Apple Pie Taquitos

These Apple Pie Taquitos are perfect for Fall! Flour tortillas stuffed with a delicious apple pie filling then baked in the oven until crispy and drizzled with caramel sauce.

Ingredients

Servings

Filling:

  • 3-4 apple peeled, cored, and diced ( Gala or Granny Smith
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 Tablespoon cornstarch
  • 1/4 cup tequila or water

Tortilla Wrap:

  • 8-10 tortillas flour, small
  • 2 Tablespoon butter Melted
  • 1/4 cup brown sugar
  • 1/4 cup sugar granulated
  • 1/2 teaspoon cinnamon

Garnish:

  • caramel sauce
  • Whipped Cream

Instructions

  1. In a medium-sized frying pan add all of the filling ingredients, and toss to combine. Cook over medium heat and simmer for 10-15 minutes. Stir the apple mixture often to evenly coat the apples in a brown sugar sauce. Remove the front heat and set it to the side to cool to room temperature.
  2. Preheat the oven to 350 degrees. In a small bowl add the sugar and cinnamon, and whisk to combine. Wrap the tortillas in a damp paper towel and microwave for 30 seconds. Lay the tortillas on a baking sheet and scoop ¼ cup of apple filling into each tortilla. Wrap the tortilla around the apple filling and place it seam down on the baking sheet. Repeat with all tortillas.
  3. In a small bowl add your butter and microwave for 30 seconds to melt. Brush each tortilla with the melted butter. Bake the taquitos for 15 minutes. Brush on more melted butter on top of the taquitos. Now sprinkle the cinnamon sugar on top of the taquito. Drizzle the caramel sauce on top of the taquitos. Serve warm, add whip or ice cream, and enjoy
