Description
The pie crust is pressed into a nine-inch plate, pricked to prevent bubbling, and pre-baked briefly to provide a sturdy base. The streusel topping is prepared by combining flour, brown sugar, and cinnamon, then cutting in cold butter until pea-sized crumbs form. This mixture is chilled until ready to top the pie.
Apple slices are mixed with brown sugar, granulated sugar, flour, and apple pie spice to coat evenly. This filling is spooned into the partially baked crust and topped with the chilled streusel. The pie bakes at 400°F for about 50 minutes, allowing the filling to soften and the crust and topping to brown and crisp. Cooling on a wire rack helps set the filling and topping.
The pie yields extra streusel, and avoid adding excess apple juice from the sugar mixture to prevent sogginess. Raisins may be added to the apple filling if desired. Using a store-bought pie crust is a time-saving option, though homemade crusts also work well with this recipe.
Ingredients
- 1 prepared pie crust from a 15 oz package, refrigerated
For the Streusel Topping
- 1 cup all-purpose flour
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tick butter cubed and cold, salted
For the Apple Pie Filling
- ⅓ cup brown sugar firmly packed
- ⅓ cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon apple pie spice
- 6 apple peeled, cored, and sliced, Granny Smith variety
- ¼ cup powdered sugar
Instructions
- Preheat oven to 400°. Place the baking rack at the lowest level of the oven.
- Press pie crust into a 9-inch pie plate, crimp or pleat crust edges). Using the tines of a fork, prick the bottom of the pie crust 4-6 times.
- Place on a baking sheet and bake 15 minutes. Remove and set to the side once done cooking.
For the Streusel Topping:
- In a large bowl combine the flour, brown sugar, and cinnamon. place cubed cold butter into flour mixture. Using the tines of a fork (or a pastry cutter). Mix until pea-shape pieces of flour appear. Place in the refrigerator until ready to top pie.
For the Apple Pie Filling
- Combine the sugar, brown sugar, flour, and apple pie spice in a separate large bowl. Press out lumps and mix well.
- Peel, core, and slice the apples. Place in the cinnamon sugar mixture. Toss to coat all apples with mixture.
- Fill the apple mixture into the pie crust. Top evenly with the crumb mixture.
- Bake for 50 minutes. Cool the pie on a wire rack for at least 30 minutes. Dust with powder sugar before serving.
Notes
- The recipe makes slightly more streusel than actually used; leftover streusel can be saved for other baking or topping uses.
- Do not pour excess juice released from apples after mixing with sugars into the pie, as it may cause a soggy crust.
- Add a quarter cup of raisins to the apple filling if you prefer added texture and sweetness.
- Although the recipe uses prepared pie crust, a homemade crust can be substituted if preferred.
