Description

Apple Slab Pie starts with two sheets of puff pastry layered and rolled out to form a thin, even crust base in a large sheet pan. The filling combines peeled and thinly sliced gala apples with granulated sugar, brown sugar, cinnamon, nutmeg, flour, salt, and vanilla, creating a sweet, spiced mixture that thickens as it bakes.

The pie is topped with a crumbly streusel made of cold butter, flour, brown sugar, and cinnamon, which bakes to a golden crust adding texture contrast to the tender apples beneath. The baking process lasts about 40-45 minutes until the crust and topping brown nicely and the apples soften.

Once baked, the pie receives a drizzle of a glaze made from powdered sugar, pure maple syrup, maple extract, and milk, enhancing sweetness and complementing the fall flavors. Ingredients

  • 2 heets puff pastry refrigerated, 1 package
  • 6 apple I used gala), peeled and very thinly sliced, large or 8 medium
  • 1 cup sugar
  • ¼ cup brown sugar
  • 2 tsp cinnamon
  • ¼ cup flour
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • 1 tsp vanilla

Streusel Topping

  • 4 tbsp butter cut into cubes, cold
  • ½ cup flour
  • cup brown sugar
  • 1 tsp cinnamon

Glaze

  • 1 cup powdered sugar
  • 1 tbsp pure maple syrup (see note)
  • ½ tsp maple extract (see note)
  • 2-4 tbsp milk as needed

Instructions

  1. Preheat oven to 375 degrees and lightly grease an 18x13 inch sheet pan.
  2. Unroll the pie crusts. Place one on top of the other and use a rolling pin to roll out to 1/8 inch thick. Lay crust on the sheet pan and press into the edges of the pan.
  3. In a large bowl whisk together sugar, brown sugar, cinnamon , flour, nutmeg, salt, and vanilla. Add apples and toss to coat.
  4. Spread apple mixture evenly on top of the crust.
  5. Prepare the crumb mixture by whisking together flour, sugar, and cinnamon. Add the cubed butter and cut in with a fork or pastry cutter ( you can also smoosh it in with your fingers) til butting is dispersed throughout the sugar mixture. Sprinkle even over the apples.
  6. Bake for 40-45 minutes until the streusel topping starts browning and the apples are fork-tender.
  7. While pie is baking, prepare the glaze by mixing together the powdered sugar, maple syrup, maple extract, and enough milk to reach a pourable consistency.
  8. Drizzle glaze over the pie, cut into squares, and serve alone or topped with vanilla ice cream.

Notes

  • The maple syrup and maple extract in the glaze can be replaced with 1 teaspoon vanilla extract for a milder flavor.
