Apple Walnut Bread

Simple Apple Walnut Bread with applesauce. Recipe from Family Fun magazine. Maple butter is a great accompaniment.

Ingredients

  • 1 cup smooth unsweetened applesauce
  • 1/2 cup sugar plus 1 Tablespoon for sprinkling
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup PLAIN yogurt
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 cup peeled cored, and finely diced apple
  • 1/2 cup chopped walnuts
  • For the Maple Butter:
  • 8 Tablespoons unsalted butter
  • 2 Tablespoons pure maple syrup

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9" x 5" loaf pan and set aside.
  2. Combine the wet ingredients, applesauce through vanilla extract, in a large bowl. Whisk well to blend.
  3. In another large bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Make a well in the dry ingredients with a spoon and pour in the applesauce mixture. Stir just enough to combine; do not over mix. Fold in the apples and walnuts.
  4. Pour into pan and smooth. Sprinkle 1 Tablespoon of sugar over top of bread and bake 45-50 minutes or until a toothpick comes out clean.
  5. Remove from oven and allow to cool about 15 minutes. Remove from loaf pan and finish cooling on a wire rack.
  6. For Maple Butter, whip softened butter with maple syrup. Chill.
