  • ½ cup raisins

Frosting

  • 5 oz cream cheese softened at room temperature
  • 3 Tablespoons butter softened at room temperature, unsalted
  • ¼ teaspoon vanilla extract
  • 1 cup powdered sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F and place parchment paper in a 9 x 13 inch baking dish.
  2. Whisk together flour, baking powder, baking soda, salt, and spices in a medium bowl.
  3. In a large bowl, beat eggs until light and fluffy. Add coconut oil, sugar, and vanilla and beat with an electric mixer until well incorporated, 2 to 3 minutes. Add applesauce. At low speed, mix in flour mixture until just combined, then stir in walnuts and raisins.
  4. Pour into the prepared baking dish and bake until golden-brown and a wooden pick inserted into the center comes out clean, 40 to 45 minutes. Cool completely.

  6. Spread frosting evenly on top of cooled cake. Cut the cake into small squares and decorate with chopped walnuts.
