Applesauce Cake
Description
Applesauce Cake blends all-purpose or gluten-free flour with baking soda and powder, salt, and a mix of spices including cinnamon, allspice, nutmeg, and cloves. The wet ingredients combine eggs, melted coconut oil, coconut or brown sugar, vanilla extract, and applesauce for moisture and mild fruit flavor. Chopped walnuts and raisins provide texture and bursts of sweetness within the batter.
After baking in a parchment-lined 9 x 13 inch pan for about 40 to 45 minutes until golden and set, the cake cools completely before being topped with a smooth cream cheese frosting made from cream cheese, butter, powdered sugar, vanilla, and cinnamon. The frosting complements the spicy cake with a creamy sweetness.
The cake can be adapted for gluten-free diets by using appropriate flour blends. Additionally, modifications such as Paleo or Whole30 frosting options are possible for specific dietary preferences. Cooling the cake fully before frosting is important to prevent sliding. Covering the cake with foil can avoid over-browning during baking.
Ingredients
Cake
- 2 cups flour all purpose or gluten-free
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground allspice
- ½ teaspoon nutmeg grated
- ¼ teaspoon cloves ground
- 1 teaspoon cinnamon
- 2 egg large
- ½ cup coconut oil melted
- 1 cup coconut sugar or brown sugar
- 1 teaspoon vanilla extract
- 2 cups applesauce
- ½ cup walnuts plus extra for decorating frosting, chopped, or pecans
- ½ cup raisins
Frosting
- 5 oz cream cheese softened at room temperature
- 3 Tablespoons butter softened at room temperature, unsalted
- ¼ teaspoon vanilla extract
- 1 cup powdered sugar
- ½ teaspoon cinnamon
Instructions
- Preheat the oven to 350°F and place parchment paper in a 9 x 13 inch baking dish.
- Whisk together flour, baking powder, baking soda, salt, and spices in a medium bowl.
- In a large bowl, beat eggs until light and fluffy. Add coconut oil, sugar, and vanilla and beat with an electric mixer until well incorporated, 2 to 3 minutes. Add applesauce. At low speed, mix in flour mixture until just combined, then stir in walnuts and raisins.
- Pour into the prepared baking dish and bake until golden-brown and a wooden pick inserted into the center comes out clean, 40 to 45 minutes. Cool completely.
- Combine all frosting ingredients (cream cheese, butter, powdered sugar, cinnamon, and vanilla extract) in a mixing bowl and beat with an electric mixer until smooth.
- Spread frosting evenly on top of cooled cake. Cut the cake into small squares and decorate with chopped walnuts.
Notes
- Line the baking pan with parchment paper for easy removal of the cake after baking.
- Preheat the oven before mixing the batter to ensure even baking; avoid placing cake in a cold oven.
- If the cake browns too quickly on top, cover loosely with foil to prevent burning.
- Allow the cake to cool completely before applying frosting to keep it from sliding off.
- Use gluten-free flour to adapt the cake for gluten-free diets.
- Paleo or Whole30 frosting alternatives can be used for specific dietary needs.
