Ingredients

Servings

Streusel

  • 3/4 cup flour *all purpose
  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 2 tablespoon cinnamon
  • 1 cup pecans *chopped
  • 2 tablespoon butter cut into cubes, cold, unsalted

Coffee Cake

  • 1 cup applesauce *unsweetened
  • 1 1/2 cups sour cream
  • 2 egg
  • 1 tablespoon vanilla extract
  • 1/2 cup butter softened, unsalted
  • 1/2 cup sugar
  • 2 1/4 cup flour *all purpose
  • 1 tablespoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt

Instructions

To make streusel:

  1. In a bowl, whisk together the flour, sugar, brown sugar, and ground cinnamon. Add in the cold butter and cut it in using a pastry blender or two forks until coarse crumbs form. Stir in the pecans. Set bowl aside.

To make coffee cake:

  1. Preheat oven to 350 degrees and grease a 9x13 baking dish with non-stick cooking spray.
  2. In a small bowl, combine the applesauce, sour cream, and vanilla. Set aside.
  3. In a separate small bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  4. In a medium mixing bowl, cream the butter and sugar using an electric mixer or stand mixer until smooth and creamy. Add in the eggs stirring until just combined.
  5. Slowly add in the dry ingredients mixture and applesauce mixture stirring until just combined.
  6. Pour 1/2 batter into prepared pan followed by 1/3 of the streusel mixture.
  7. Pour remaining batter on top followed by remaining streusel.
  8. Place baking pan into preheated oven and bake for about 35-40 minutes, or until cake feels firm in the center and toothpick comes out clean when inserted into center of cake.
  9. Remove from oven and allow to cool slightly before serving!
