Arayes Recipe
Description
This Arayes recipe combines finely mixed ground beef with onion, garlic, parsley, and a distinct spice blend to create a filling with balanced aromatic and savory notes. The mixture’s slightly sticky texture helps it adhere between the thin, double-layered pita bread pieces. Cutting the pita into quarters and stuffing each piece ensures manageable portions that crisp evenly during cooking.
The cooking can be done on a stovetop grill pan with olive oil, turning each side to brown and fully cook the beef, or in a hot oven where the pita crisps and the meat cooks for about 12 to 15 minutes, flipped halfway. Serving with tangy tahini sauce or yogurt offers a creamy contrast to the spiced meat and crispy bread.
Accompanying Arayes with fresh salads like tabbouleh, fattoush, or shirazi salad fits common serving traditions, emphasizing fresh and vibrant flavors to offset the richness. This dish is often served hot and freshly prepared for the best texture and flavor.
Ingredients
- 1 lb ground beef 90% lean
- 1 onion grated and squeezed to remove excess liquid
- 2 cloves garlic minced
- 1/2 cup parsley chopped
- 1 tbsp seven spice
- 1/2 tsp cumin
- 1/2 tsp Coriander
- 1 tsp paprika
- 1 tsp kosher salt
- 1/4 tsp black pepper freshly ground
- 4 pita bread double ply and preferably thin
- 2 tbsp olive oil
Instructions
- In a large bowl mix the ground beef, onion, garlic, parsley, seven spice, cumin, coriander, paprika, salt and pepper using your hands. Make sure all is combined well. The mixture might be sticky.
- Cut the pitas into quarters and spread the beef mixture between the two thin layers of each piece. You'll need 2 to 3 tablespoons of beef mixture for each piece.
To cook on the stovetop:
- Place a grill pan over medium heat and make sure it's hot. Brush the pan with the olive oil and place the stuffed pitas on the pan. Cook for 5 minutes on each side until the beef is fully cooked and the pita is crispy.
To bake in the oven:
- Preheat the oven to 400°F and brush the stuffed pitas with olive oil on both sides. Place them on a baking sheet and bake them in the oven for 12 to 15 minutes, flipping halfway through.
- Serve with tahini sauce or yogurt.
Notes
- Serving Arayes with tabbouleh, fattoush, or shirazi salad complements the rich, spiced meat.
- Prepare the beef mixture up to one day in advance and keep refrigerated to simplify cooking day.
- Serve immediately after cooking for best texture and flavor.
