Argentinian Chimichurri Recipe

This Argentinian chimichurri is a vibrant sauce made from fresh cilantro, parsley, onion, garlic, and spices blended with cooking oil and red wine vinegar. It has a fresh herbaceous flavor with a hint of heat from red pepper flakes. The sauce is smooth and bright, offered as a condiment or marinade.

Description

The recipe for Argentinian Chimichurri blends herbs like cilantro and parsley with diced onion, garlic, seasoning, cooking oil, and vinegar until smooth. This blending creates a uniform sauce contrasting with the traditional stirred chimichurri, which is chunkier with oil added last. The vinegar provides acidity to balance the herb and garlic flavors, while red pepper flakes introduce mild heat. Salt and pepper season accordingly.

This chimichurri can be served immediately, enhancing grilled meats or vegetables with its fresh and tangy profile. Its smooth texture distributes flavor evenly when used as a sauce or dipping oil.

The sauce can be stored covered at room temperature for up to 24 hours before serving, allowing flavors to meld further. Different preparation methods—fully blended, stirred, or a hybrid pulsed style—offer variety in texture and flavor intensity.
