Arkansas Green Beans Recipe

Arkansas Green Beans combine fresh green beans with bacon, brown sugar, butter, soy sauce, and garlic powder baked until tender and flavorful. The dish balances savory, sweet, and smoky notes with a soft texture, making it a comforting side.

Description

This recipe starts by trimming fresh green beans and simmering them briefly until tender. After draining, the beans go into a baking dish topped with cooked, crumbled bacon. A sauce made from melted butter, brown sugar, soy sauce, and garlic powder is drizzled over before baking uncovered at 350°F for 20 minutes. The baking melds flavors and gently softens the beans further.

The result is green beans infused with the saltiness and smokiness of bacon, offset by a mild sweetness from brown sugar and umami from soy sauce. The garlic powder adds subtle depth. The beans are tender but not mushy, suitable as a warm side for many dishes.

Serve these beans alongside roasted or grilled meats or as part of a Southern-inspired meal. They also keep well refrigerated for several days and can be reheated in the microwave or oven.

To store leftovers, keep them in an airtight container in the fridge for up to 3-4 days or freeze for 2-3 months. Reheat thoroughly before serving.

Ingredients

Servings
  • 1 ½ lb. Green bean fresh
  • 6 lices Bacon
  • 1/3 cup brown sugar packed
  • ¼ cup butter melted, salted
  • 3 teaspoons soy sauce
  • ½ teaspoon garlic powder

Instructions

  1. Begin by heating the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Trim the ends of the green beans and cut or snap them into 1 ½-2 inch pieces. Place them in a large saucepan.
  3. Add enough water. Make sure that it completely covers the beans. Then, bring it to a boil.
  4. Reduce the heat, cover the beans, and simmer for an additional 5 minutes.
  5. Drain the beans and transfer them to a two-quart glass or oven-safe ceramic baking dish, like a 9" x 9" Pyrex dish.
  6. Heat a large skillet over medium heat. Add the bacon and cook, turning it often, until it is brown on the edges. Transfer the cooked bacon to a baking rack or a paper towel-lined plate to cool.
  7. Once the bacon is cool to the touch, crumble it into pieces and sprinkle the bacon over the beans in the baking dish.
  8. Take a small bowl and mix the melted butter, brown sugar, soy sauce, and garlic powder together.
  9. Drizzle the mixture over the beans and bacon, coating them evenly.
  10. Bake uncovered for 20 minutes, then gently stir to ensure the sweet and savory sauce coats all the beans.
  11. Keep baking for an additional 15 minutes. Then, serve and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • Freeze green beans in freezer bags for up to 2-3 months; ensure to expel air to avoid freezer burn.
  • Reheat leftovers in a microwave-safe dish or in the oven at 350°F covered with foil, or warm gently on the stovetop.
