  • 2 Tbs sesame oil
  • 1 bunch green onion chopped, (divided into greener and whiter parts
  • 1 bell pepper , diced
  • 2 hotdog
  • 2 egg beaten
  • 2 garlic cloves
  • 1 tablespoon ginger root , grated
  • 1 cup chicken cooked and shredded
  • 4 cups rice pre-cooked, cold
  • 2-3 Tablespoons soy sauce (more or less to taste)

Instructions

  1. Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom.
  2. Add hot dogs, onion, and bell pepper. Add garlic and ginger.
  3. Slide to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs.
  4. Once cooked, mix the eggs with the vegetable mix.
  5. Add the rice and chicken to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined.
  6. Season with additional salt, if needed, to taste.
