Arroz Maluco - Brazilian Fried Rice with Ham and Egg

Arroz Maluco is a Brazilian-style fried rice combining browned ham, sautéed onions, scrambled eggs, cooked rice, and frozen peas. The rice is warmed and mixed with savory ham and tender eggs before finishing with crisp potato sticks and fresh parsley for added texture and freshness. It’s a hearty and colorful dish that can serve as a meal on its own.

Description

The recipe stars cooked rice combined with cubed ham browned in butter to bring out its savory flavor. Onions are softened to add sweetness, then eggs are scrambled directly in the pan, creating small curds that disperse throughout the dish. Frozen peas add pops of sweetness and color without thawing requirements. The rice is gently stirred to combine all components and warmed through.

The dish finishes with crunchy potato sticks scattered on top for texture contrast, while fresh parsley adds a mild herbal note. This preparation is straightforward and uses commonly found ingredients for a filling fried rice variation.

It works well as a quick lunch or dinner and can be served as a complete one-pan meal. The potato sticks and parsley toppings are added at serving to preserve their texture and freshness, offering a balance to the warm, soft rice mixture.
