Ingredients

Servings
  • 320 gms rice Arborio, Carnaroli or Vialone nano, 11.3 oz
  • ½ onion finely chopped
  • 120 gms Taleggio cheese 4.25 oz
  • 2 Artichoke thinly sliced
  • 2 tbsp extra virgin olive oil
  • 50 ml white wine 1.7 oz
  • 1 chicken stock or vegetable stock, 33.8 oz
  • 4 tbsp parmigiano reggiano finely grated
  • 30 gms butter 2 tbsp
  • salt to taste
  • black pepper to taste

Notes

  • Do not wash the rice when you make risotto. You need all that starch to make it creamy!
