Ingredients
- 320 gms rice Arborio, Carnaroli or Vialone nano, 11.3 oz
- ½ onion finely chopped
- 120 gms Taleggio cheese 4.25 oz
- 2 Artichoke thinly sliced
- 2 tbsp extra virgin olive oil
- 50 ml white wine 1.7 oz
- 1 chicken stock or vegetable stock, 33.8 oz
- 4 tbsp parmigiano reggiano finely grated
- 30 gms butter 2 tbsp
- salt to taste
- black pepper to taste
Notes
- Do not wash the rice when you make risotto. You need all that starch to make it creamy!
