Description

  • 2 1/2 pork loin cut into 1-inch cubes
  • 2 teaspoons salt
  • 3 garlic chopped, cloves
  • 4 cups Red Chile Sauce
  • 1 1/4 cups tomato sauce
  • 1/4 teaspoon oregano crushed, dried, Mexican
  • 1/4 teaspoon cumin ground
  • water

Instructions

  1. Heat a large skillet over medium-high heat. Add oil to pan; swirl to coat. Add pork to pan; cook 5 minutes. Add salt and garlic and continue cooking until pork is thoroughly cooked, about 10 to 15 minutes.
  2. Add red chile sauce, tomato sauce, oregano, and cumin. Let mixture come to a boil and add water to desired consistency. Simmer for another 10 minutes to let the flavors come together. 

Notes

  • Freeze the pork briefly (15-20 minutes) for easier cubing and even pieces.
  • Do not simmer the pork too long to avoid drying; it may remain slightly pink before simmering in sauce.
  • Leftover Asado de Puerco tastes better after flavor melding and can be refrigerated for four days or frozen for three months.
  • Prepare the red chile sauce in advance; it keeps refrigerated up to a week or frozen for six months.
  • Reheat leftovers gently over low heat or in the microwave to preserve texture.
