Asiago Bruschetta Roasted Asparagus

Asiago Bruschetta Roasted Asparagus features fresh asparagus topped with a flavorful bruschetta mixture of diced tomatoes, garlic, onions, and basil, finished with shredded Asiago cheese. Roasting at a high temperature softens the asparagus and melts the cheese, creating a combination of tender stalks with juicy, fragrant toppings and a savory, cheesy crust.

Description

This recipe prepares fresh asparagus by trimming and seasoning with salt, pepper, and olive oil. The bruschetta topping, made of fresh Roma tomatoes, minced garlic, diced onions, and chopped basil, is mixed with olive oil and spread over the asparagus. Sprinkling shredded Asiago cheese on top adds a sharp, nutty flavor that complements the roasted vegetables. Baking at 400°F cooks the asparagus until tender and softens the bruschetta, while melting the cheese into a golden crust.

The dish offers a vibrant vegetable side with layers of texture—from the slight crispness of asparagus tips to the melted cheese and bright, fresh bruschetta. It pairs well with grilled meats or can be served as a light appetizer or vegetarian main. Eating while warm preserves the asparagus's tenderness and the cheese’s creaminess.
