Asian Chopped Salad Recipe
Description
The salad features a mix of crunchy vegetables and toppings layered for varied texture, including both cabbages for color and crunch, bell pepper for sweetness, carrot for freshness, and sugar snap peas for crisp bite. Topping with toasted cashews gives a nutty depth, while sesame seeds add a subtle sesame aroma. Chow mein noodles or crispy wontons provide a pleasing crunch.
The dressing balances sesame oil’s richness with the acidity of rice vinegar and lime juice, sweetness from honey, and the sharpness of fresh grated ginger. Seasoned with salt and black pepper, it is shaken to emulsify and poured over the salad just before serving to keep the ingredients crisp and vibrant.
This salad works well as a side dish or light meal, offering a refreshing contrast in texture and flavor, with the balance of sweet, tangy, nutty, and fresh notes. Serving immediately helps maintain the crispness of ingredients especially the noodles and cashews.
