Asian Duck Sliders

These Duck Sliders combine ground duck's sausage-like flavor with warm Chinese Five Spoice powder for a winning game day dish!Yield: 8 sliders

Ingredients

Honey Ginger Slaw

  • 2 c red cabbage shredded
  • 1 carrot julienned
  • 1 onion sliced, sweet
  • ½ c pineapple crushed with juice
  • 2 tsp soy sauce
  • 2 tsp white vinegar
  • 2 tsp honey
  • 1 tsp ground ginger

Duck Sliders

  • 1 lb ground duck
  • 2 ½ tsp Chinese five-spice powder
  • ½ tsp ground ginger
  • ¼ tsp garlic powder
  • 1/8 tsp red pepper flakes
  • 8 slider buns (We used French bread rolls.)

Instructions

Honey Ginger Slaw

  1. Place the cabbage, carrots, onions and pineapple in a large bowl.
  2. In a small bowl, whisk together soy sauce, vinegar, honey and ginger until combined. Pour sauce over veggies, and stir until coated.
  3. Set aside. (This can be made ahead of time and refrigerated for up to 24 hours.

Duck Sliders

  1. In a medium bowl, mix together ground duck, Five Spice powder, ginger, garlic and red pepper flakes.
  2. Heat a large skillet over medium-high heat. Form 2 Tbsp of the duck mixture into a patty, roughly 2½ - 3 inches in diameter. Place patties onto the hot skillet and cook for 2 minutes on each side, until the color of the meat has changed and the patty is firm. Remove from heat and continue with the remaining duck mixture.
  3. To form the sliders, place one patty in each bun and top with the Honey Ginger Slaw.
