Asian Edamame Salad

Asian Edamame Salad is a fresh mix of shelled edamame, diced cucumber, red bell pepper, green onions, and cilantro, tossed with sesame seeds and an Asian-style vinaigrette. The vinaigrette combines rice wine vinegar, olive and sesame oils, tamari sauce, honey for sweetness, sriracha for heat, and ground ginger for warmth. The result is a crisp, flavorful salad with bright tang and a balance of sweet, savory, and spicy notes. This salad is suitable as a side dish or light lunch for those seeking a vegetable-forward, protein-rich cold salad.

Description

The Asian Edamame Salad assembles cooked, shelled edamame with crunchy diced cucumber and red bell pepper, thinly sliced green onions, and chopped cilantro. Sesame seeds add a nutty crunch that complements the vegetable freshness. The salad ingredients provide a crisp textural base and a mildly sweet, earthy flavor from the edamame.

The dressing combines rice wine vinegar for acidity, a mix of olive and sesame oils for richness and a distinct toasted sesame flavor, tamari or low sodium soy sauce for umami, honey for subtle sweetness, sriracha to add mild heat, and ground ginger for a warm, slightly spicy undertone. Tossed together, this vinaigrette coats the salad evenly, balancing brightness, sweetness, and spice.

This salad can be served immediately or chilled to meld flavors further. It pairs well as a light side or starter and offers a good source of plant protein and fresh vegetables. Its fresh, clean flavor makes it appealing during warmer months or alongside Asian-inspired meals.
