Asian Garlic Noodles
Description
This recipe begins by cooking spaghetti until al dente. Shrimp are then quickly cooked in a skillet with olive oil and a portion of the soy sauce based sauce, which contains garlic, brown sugar, sambal oelek, oyster sauce, ginger, sesame oil, and reduced sodium soy sauce. After removing the shrimp, the vegetables – cremini mushrooms, diced red bell pepper, zucchini, and grated carrot – are sautéed until tender but still slightly crisp.
The cooked noodles and shrimp are returned to the skillet with the remaining sauce, allowing the flavors to meld evenly over medium heat. The sauce offers a harmonious blend of salty, sweet, and spicy notes from the soy, sugar, chili paste, and oyster sauce, complementing the garlic and ginger aromatics. The dish is finished with chopped fresh cilantro to lend a fresh, herbaceous note.
As a versatile noodle dish, these Asian Garlic Noodles work well for a quick weeknight meal or casual dinner. The recipe includes an option to substitute sriracha in place of sambal oelek for heat variation.
Ingredients
- 8 ounces spaghetti
- 12 ounces Shrimp peeled and deveined, medium
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms sliced
- 1 red bell pepper diced
- 2 zucchini diced
- 1 carrot grated
- 2 tablespoons cilantro fresh, chopped leaves
For the sauce
- ⅓ cup soy sauce reduced sodium
- 3 cloves garlic minced
- 2 tablespoons brown sugar packed
- 1 tablespoon sambal oelek or more, to taste*
- 1 tablespoon oyster sauce
- 1 tablespoon ginger freshly grated
- 1 teaspoon sesame oil
Instructions
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Heat olive oil in a large cast iron skillet over medium high heat. Add shrimp and 2 tablespoons soy sauce mixture, and cook, stirring occasionally, until pink, about 2-3 minutes; set aside.
- Stir in mushrooms, bell pepper, zucchini and carrot to the skillet. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in spaghetti, shrimp and remaining soy sauce mixture until well combined, about 2-3 minutes.
- Serve immediately, garnished with cilantro, if desired.
For the sauce
- In a small bowl, whisk together soy sauce, garlic, brown sugar, sambal oelek, oyster sauce, ginger and sesame oil.
Notes
- Sriracha sauce can be used instead of sambal oelek to adjust the spiciness level.
