Description
This dish starts by cooking noodles until tender, then preparing a sauce by gently cooking garlic in butter to light caramelization. Oyster sauce and soy sauce provide the savory base, balanced by brown sugar's sweetness and sesame oil's nutty aroma. Turmeric adds an optional hint of color without strong flavor.
Chopped scallions are wilted before combining the noodles with the sauce and incorporating Parmesan cheese, which lends a creamy, salty note. Pasta water may be added to adjust sauce consistency, ensuring the noodles are well coated but not heavy.
The result is silky noodles with bright garlic flavor and an umami-rich sauce that can serve as a simple meal or side. Using different noodle types like fresh egg noodles or dried Asian-style noodles offers textural variations while keeping the flavor profile consistent.
Ingredients
- 12 ounces spaghetti 340g; can also use dried Chinese noodles or fresh egg noodles, thin
- salt
- 4 tablespoons butter unsalted
- 8 cloves garlic (peeled and thinly sliced)
- 1/8 teaspoon Turmeric (optional)
- 1 tablespoon oyster sauce (or vegetarian oyster sauce)
- 1 tablespoon soy sauce
- 1-2 teaspoons brown sugar (depending on your taste)
- 1 teaspoon sesame oil
- 1-2 scallions chopped, whole
- 1/4 cup Parmesan Cheese
Instructions
- Bring a large pot of salted water to a boil. Cook the noodles/pasta according to package instructions. If using fresh noodles, you may simply need to blanch them. (Reserve some of the pasta cooking water, as you may need it in the sauce later.)
- Meanwhile, heat the butter in a large skillet over medium heat and add the garlic. Cook for 5 minutes, until lightly caramelized, and stir in the turmeric (if using), oyster sauce, soy sauce, brown sugar, and sesame oil. Stir for 1 minute and add the scallions.
- After 30 seconds, to let the scallions wilt, toss in the cooked pasta and parmesan cheese. If the sauce is too thick, add a few tablespoons of the noodle cooking water to loosen them up. Serve!
