Ingredients
For the dressing:
- 3 tablespoons avocado oil or olive oil
- 3 tablespoons rice wine vinegar
- 3 tablespoons soy sauce lite or Tamari
- 1 tablespoon honey
- 2 teaspoons sesame oil
- 1 clove garlic minced
- 1 ginger heaping teaspoon, freshly grated
- crushed red pepper flakes to taste
For the salad:
- 2 cups chicken shredded
- 1 1/2 cups cabbage shredded
- 1 cup carrot shredded
- 1 cup cucumber chopped
- 1 cup edamame
- 1 avocado diced
- 3 green onion sliced
- 1/4 cup cilantro chopped
- 1/4 cup mint chopped
- 2 tablespoons sesame seeds
- 1/3 cup peanuts chopped, or cashews
- salt to taste, Kosher salt
- black pepper to taste, Kosher salt
- chili crunch for serving, optional
Instructions
- In a small bowl, whisk together the oil, soy sauce (or Tamari), rice wine vinegar, honey, sesame oil, garlic, ginger, and crushed red pepper flakes.
- In a large bowl, combine the shredded chicken, cabbage, carrots, cucumber, edamame, avocado, green onions, cilantro, mint, and sesame seeds.
- Pour the dressing over the salad and toss until well combined. Top with peanuts or cashews. Taste and season with salt and pepper, if necessary. You can serve with a little chili crunch, if desired.
Notes
- Storing: If already tossed, it’s best eaten within 2 days. Store in an airtight container in the fridge. Store components separately for best texture. Keep the salad ingredients (minus the avocado and dressing) in an airtight container in the fridge for up to 3 days. Store the dressing in a jar or small container separately, it will keep for up to 1 week. Whisk before using. Add the avocado and dressing just before serving to prevent browning and sogginess.
