Asian Ramen Salad

Asian Ramen Salad combines crunchy, crumbled ramen noodles with a fresh coleslaw mix, slivered almonds, sesame seeds, and green onions. The salad is dressed in a tangy-sweet vinaigrette made from olive oil, sugar, distilled vinegar, and toasted sesame oil. Its texture balances crisp, fresh vegetables with the distinctive crunch of the noodles and nuts, making it a lively side dish or light meal.

Description

Asian Ramen Salad features broken ramen noodles mixed directly with coleslaw mix, almonds, sesame seeds, and green onions, creating a blend of textures and flavors. The dressing is a blend of olive oil, granulated sugar, white distilled vinegar, and toasted sesame oil that is whisked until combined. Tossing this dressing with the salad coats the ingredients in a slightly sweet and tangy glaze. Because the ramen noodles soften over time after absorbing moisture, this salad is best served fresh or within a few hours of preparation.

The salad’s crisp vegetables and crunchy nuts contrast with the delicate softness that develops in the noodles after dressing, providing a versatile dish suitable for outdoor picnics or casual meals. It complements various Asian-inspired dishes or can be served on its own as a refreshing meal.

To maintain the crunch of the ramen noodles, it’s advisable to keep them separate until just before serving if preparing ahead. This ensures the noodles retain their texture rather than becoming soggy after sitting in the dressing.

  • 2 packages ramen noodles 3 ounces each, any flavor
  • 16 ounces coleslaw mix
  • 1 cup almonds slivered
  • 3 tablespoons sesame seeds
  • ½ cup green onion chopped
  • ½ cup olive oil
  • ½ cup granulated sugar
  • ¼ cup white distilled vinegar

  2. Add the coleslaw mix, almonds, sesame seeds, and green onions and toss.
  3. Add the olive oil, sugar, vinegar, and sesame oil to a small bowl and whisk well to combine.
  4. Pour the dressing over the salad and stir to coat.
  5. Serve immediately or cover and refrigerate for up to 6 hours. Best served fresh.

Notes

  • Prepare the salad fresh or within 6 hours to avoid soggy noodles.
  • If making ahead, keep the ramen noodles separate and mix them into the salad just before serving to maintain crunch.
